The formula

1:1:1.5–2 base : garlic : oil

500 g cooked potato (or 120 g dry bread + 300 g water) : 500 g garlic (≈40 medium cloves) : 750–1000 g olive oil. Lemon juice 15–30 g optional. Salt to taste. Yields ≈1.5 kg sauce. Scale by any unit; garlic defines the sauce — the 1:1 ratio with base is non-negotiable.

Troubleshooting

Sauce breaks and oil pools on top during or after emulsification

Oil added too quickly, or insufficient starchy base to absorb it. The matrix cannot trap droplets fast enough.Remove to a bowl, mash in additional starchy base (more potato or soaked bread) gradually, and re-emulsify with a slow drizzle of oil. Prevent by adding oil very slowly.

Garlic tastes harsh, acrid, or metallic rather than mellow and aromatic

Garlic over-processed in a blender or food processor, generating heat and degrading allicin. Or not ground long enough in mortar.Use a mortar. If remedy is needed: fold in more plain mashed potato to dilute harshness and let rest refrigerated for 2 hours for volatiles to mellow.

Sauce is too thick and stiff to spread

Too little liquid, or potato used cold without enough residual moisture. The starch matrix has tightened on cooling.Work in cold water one tablespoon at a time, or thin with a spoonful of the liquid the accompanying fish or vegetable was cooked in.

Sauce tastes flat or one-dimensional

Acid absent, salt insufficient, or olive oil quality too neutral to carry aromatic character.Add lemon juice gradually until brightness emerges. Increase salt. Taste the olive oil — if bland, finish with a drizzle of high-quality fresh oil.

Storage

Keeps 5–7 days refrigerated, in a clean glass jar pressed flush against the surface with plastic wrapCover the surface directly with plastic wrap to prevent oxidation of the garlic, then seal with an airtight lid. Do not leave at room temperature for more than 2 hours total. Reheat: Serve cold or at cool room temperature. Do not reheat.
