Sumbala
Soumbala · Sumbala is a West African alkaline fermented condiment base produced from the seeds of the African locust bean (Parkia biglobosa). Cooked, dehulled seeds are packed into banana-leaf bundles and undergo a 2–3 day solid-state fermentation driven by Bacillus subtilis, which raises the pH to roughly 8.0–8.2. The fermented mass is then shaped and sun-dried into dark, hard balls or slabs that are shaved, crumbled, or ground as a potent umami seasoning. It is a reusable foundational component — never served as a standalone dish — used to build flavor in sauces, soups, and grain dishes across the Sahel.

The formula

Method
- 1Boil cleaned Parkia biglobosa seeds in water for 12–24 hours until fully softened.Long boiling breaks down the hard seed coat and gelatinizes the cotyledon so the hull can be rubbed off cleanly.
- 2Dehull by pounding or rubbing between hands in water; rinse away black skins and floating debris.Hulls are bitter, indigestible, and would darken/astringent the ferment; only the pale cotyledon ferments well.
- 3Drain and tightly pack the warm dehulled cotyledons into bundles wrapped in banana leaves, expelling air.Anaerobic, warm, moist conditions select for Bacillus subtilis over spoilage molds and yeasts; banana leaves add protective microflora.
- 4Leave bundles at ambient Sahelian temperature (28–35 °C) for 2–3 days; a sticky, ammoniacal paste forms.Bacillus subtilis drives an alkaline solid-state fermentation, hydrolyzing seed proteins to free amino acids (notably glutamate) and pushing pH to 8.0–8.2.

Long wet boiling of seeds
Required to soften the sclerified testa and parenchyma of néré so the hull separates without fragmenting the cotyledon.
Alkaline solid-state fermentation in banana leaf
Selects for Bacillus subtilis and creates the signature pungency and umami depth; distinctly different from lacto-fermentation of vegetables.
Sun-drying into dense balls
Lowers water activity for shelf stability and produces a format that can be shaved or crumbled into cooking liquids at the moment of use.

Substitutions
- Parkia biglobosa seeds → Soybean (Glycine max) — Yields a natto- or kinema-like alkaline ferment; flavor profile differs but functional role is similar.
- Parkia biglobosa seeds → Castor bean (for ogiri-igba, Igbo) — Different species; produces ogiri, a sibling but distinct condiment with stronger putrid notes.
- Banana leaves → Moringa leaves or clean banana-leaf-equivalent wrapper — Maintains the warm, moist, slightly anaerobic micro-environment; do not substitute plastic.
Troubleshooting
Final balls remain soft, wet, or moldy in storage
Insufficient sun-drying or ferment run too long at low temperature → Re-dry more aggressively in direct sun; discard any visibly moldy units — they are not safe to trim.
Off smells of true putrefaction rather than clean ammoniacal pungency
Contamination by anaerobes other than Bacillus subtilis (often from torn leaves or dirty water) → Discard batch; next time tighten leaf wrapping, shorten ferment to 2 days, and use clean boiled water for dehulling.
Bitterness or astringency in finished condiment
Hull fragments not fully removed during dehulling → Soak boiled seeds longer and rub more gently but thoroughly; float off every dark speck before packing.
Hulls do not release during dehulling
Seeds under-boiled → Extend boil toward 24 h and test a seed between fingers; cotyledon should crush cleanly with no rubbery core.
