Aromatic bases & spice pastes
Tastira
تسطيرة · A foundational Tunisian aromatic base (not a finished dish) consisting of slowly fried green bell peppers, mild chiles, tomatoes, onion, garlic, and toasted caraway seeds in olive oil. It functions as the flavor-building stage that precedes the addition of eggs, tuna, or other proteins, and parallels sofrito (Spain), soffritto (Italy), or refogado (Portugal/Lusophone Africa) in role — though distinctly Tunisian through its use of caraway and mild Tunisian chiles/harissa.

The formula
3:6:8 oil:bell pepper:tomato with 4 cloves garlic, 1 tbsp caraway, 2/3 cup mild chile
Volume proportion verified against cooking-guide.com & recipezazz.com; 3 tbsp oil : 1.5 cups bell pepper : 2 cups tomato, supported by 4 cloves garlic, 1 tbsp caraway, 2/3 cup mild chile.
Identity
- Tunisian (Maghreb/North African)
- Aromatic vegetable base, not a standalone dish
- Pepper-tomato foundation with caraway signature
- Slow-fried (not sautéed) cooking technique
- Sofrito-family component
- Often assembled in stages by ingredient in same pan
Ingredients
| Base | green bell peppers, seeded and chopped | Primary vegetable; ~1.5 cups provides body and sweetness |
| Base | tomatoes, seeded and chopped | ~2 cups adds moisture, acidity, and body; can be fresh or canned |
| Base | onion, diced | 1/2 cup; present in some Tunisian versions (recipezazz), absent in others |
| Aromatics | garlic, diced or pestle-crushed | 4 cloves; crushed with caraway and salt in mortar |
| Flavor | mild chile peppers (e.g., Tunisian finger chile / banana chili), chopped | 2/3 cup; provides heat without dominating; harissa can substitute |
| Seasoning | caraway seeds | 1 tbsp; signature Tunisian spice, ground or whole, crushed with garlic |
| Fat | olive oil | 3 tbsp; used in stages to cook each component separately |
| Seasoning | salt and pinch black pepper | 1 pinch to draw moisture; final seasoning at end |
Method
- 1Pound garlic, caraway seeds, and a pinch of salt in a mortar until a rough paste forms.Mechanical crushing ruptures cells and releases volatile aroma oils (caraway's carvone, garlic's allicin) before they hit fat.
- 2Heat 1 tbsp olive oil in a skillet over medium heat; fry the mild chiles until softened (~5 min); remove and reserve.Chiles fry faster than bell pepper and turn bitter if overcooked; setting them aside lets you control each component's doneness.
- 3Add another tablespoon of oil and sweat the green bell peppers (and onion if using) until softened and any liquid has cooked off.Bell peppers need more time and surface area to release moisture; you want them concentrated, not watery, so the base coats the spoon.
- 4Add the tomatoes and a small amount of salt; cook down to a thick, jammy consistency.Tomatoes carry acid and water; reducing them concentrates umami (glutamate) and prevents a thin, watery base.
- 5Return the reserved chiles to the pan, stir in the garlic-caraway paste and remaining oil; cook 1–2 minutes more until fragrant.Adding the garlic-caraway paste late preserves its aroma; brief cooking blooms the caraway without burning the garlic.
- 6Season to taste with salt and black pepper; base is ready for eggs, tuna, or other add-ins.Final seasoning is essential because the base will dilute any protein added next; this is the pottage-ready check point.
Techniques that matter
Mortar-crushing of garlic, caraway, and salt
Wet salt acts as an abrasive to tear garlic cells and shatter caraway hulls, releasing maximum aroma.
Staged frying of peppers
Each pepper has different moisture and sugar content; cooking them separately prevents soggy or burned pieces.
Slow reduction of tomatoes
Concentrates flavor and binds the base so it holds a shape when eggs are added on top.
Variations & derivatives
With onionRecipezazz version
Adds 1/2 cup diced onion sweated with the bell peppers for a sweeter, sofrito-like base.
With harissaBennasafi / southern Tunisian home style
Uses harissa paste (1 tbsp) plus a finger of fresh chile for sharper heat and color.
With tuna and olivesBennasafi (blowfish/tuna version)
Base is finished with tuna slices, black olives, parsley, and onion on top — a coastal Medenine adaptation.
Paprika finishRecipezazz
1/4 tsp sweet paprika sprinkled on at the end for color and mild sweetness.

Substitutions
- mild Tunisian finger chiles → mild banana peppers or Anaheim chiles — Match the mild heat level; do not sub jalapeño (too hot)
- fresh tomatoes → canned crushed or diced tomatoes (drained) — Use drained to avoid diluting the reduction step
- caraway seeds → cumin seeds (less authentic) — Distinct flavor change — caraway's anise note is signaturechanges result
- onion (optional) → shallot — Milder sweetness; works but slightly different character
- olive oil → vegetable oil or a neutral oil — Workable but loses the fruity Tunisian oil note
Troubleshooting
Base is watery and the eggs don't set properly
Tomatoes were not reduced enough; bell peppers retained too much moisture. → Cook uncovered longer over medium heat until base holds a spoon-thick consistency before adding eggs.
Bitter aftertaste
Chiles or garlic cooked too long/dark, or oil smoked. → Stir in a spoon of tomato or a splash of water at the end; next batch, fry chiles shorter and add garlic late.
Caraway flavor is flat or dusty
Caraway was added too early with liquid, or was old. → Toast whole seeds dry first, then crush fresh with garlic and salt; add at end of cooking.
Base scorches on the bottom
Heat too high during tomato reduction or insufficient oil. → Lower to medium-low and stir more frequently; add a tablespoon of water to lift fond.
