tempura batter
天ぷら粉 · A cold, minimalist batter of flour, egg yolk and ice water that creates a crisp, lace-like, translucent crust when deep-fried at controlled temperature. The contrast between cold batter and hot oil produces explosive steam puffing, yielding a delicate coating with minimal grease penetration.

The formula
1 yolk : 150 g flour : 300 mL ice water
Classic proportion: 1 egg yolk, 150 g cake or low-protein flour, 300 mL ice water. Optional: up to 10% of flour weight as potato starch or cornstarch for extra crispness. Scale by volume: approximately 1 cup flour to 1 cup total liquid (egg + water). Gluten development is the enemy; mix until just combined, lumps are acceptable and preferred.

Method
- 1Combine flour and optional starch in a wide bowl. Sift or whisk briefly to aerate.Aeration reduces density and ensures even distribution of starch particles; a wide bowl allows rapid, shallow mixing.
- 2Make a well in the center. Crack the egg yolk(s) into the well, add about one-third of the ice water, and whisk gently to form a slurry.Whisking the yolk with water first emulsifies fat and water before the flour is incorporated, preventing lumps of unmixed flour.
- 3Add the remaining ice water to the flour mixture and mix with chopsticks or a fork using a light, cutting motion — 10–15 strokes maximum. The batter should be lumpy, streaky and visibly undermixed.Overmixing develops gluten, which produces a tough, doughy crust. Lumps and streaks indicate minimal gluten formation and are intentional.

Cold batter contacting hot oil creates rapid steam generation within the batter, puffing it outward and forming the characteristic hollow, translucent crust without chemical leaveners.
Temperature zoning
Starting at 170 °C for vegetables and dropping to 160 °C for shrimp prevents burning the delicate crust while fully cooking the interior.
Minimal gluten development
Cold liquid, high-starch flour, and undermixing collectively suppress gluten formation, which would make the crust tough and opaque rather than tender and translucent.
Immediate service
Tempura loses its characteristic crispness within minutes of leaving the fryer; it is always cooked to order.
Variations & derivatives
Starch-based batter (Kyoto/sweets style)Japan
Uses sweet potato starch or yam starch instead of wheat flour; no egg. Produces an even more translucent, glass-like crust. Common for sweet vegetable tempura.
Panko-adjunct coatingJapan
A thin primer coat of tempura batter followed by panko breadcrumbs is used in some katsu preparations for extra crunch, though this is hybrid rather than classical.

Substitutions
- cake flour → 1:1 mix of all-purpose flour + cornstarch (90:10 by weight) — Mimics the low-protein, high-starch profile of cake flour which is unavailable in many regions.
- egg yolk → whole egg (approximately 50% yolk by weight) — Whole egg increases moisture and slightly increases weight of crust. Acceptable but produces a marginally heavier coating.

Troubleshooting
Batter is thick, doughy and heavy after frying
Overmixing developed gluten, or the batter was made ahead and rested at room temperature → Use ice-cold liquid, mix fewer strokes, and use the batter immediately. Switch to lower-protein flour.
Batter slides off or does not adhere
Oil temperature is too high (batter sets too fast), or the ingredient is wet → Pat the ingredient dry with a cloth. Ensure oil is at 160–170 °C, not hotter. Dip quickly and let excess drip.
Crisp coating becomes soft and soggy within minutes
Oil temperature too low, causing grease penetration rather than steam-puff crusting, or holding in a closed container → Fry at correct temperature (170 °C). Drain on a rack, not on absorbent paper which traps steam and softens the crust. Serve immediately.
Uneven browning or burning on edges
Temperature zoning failure — oil too hot, or batter coating irregularly thick → Maintain oil at 160–175 °C using a thermometer. Thin, even coating; if needed, use a spoon to control batter thickness.
