Yogurt Cream
Labneh · A thick, tangy cream produced by straining fresh yogurt to remove whey, concentrating milk proteins and fat into a spreadable, spoonable mass. The straining process — driven by osmosis through a permeable membrane — transforms liquid yogurt into a dense, silky component used across Levantine, Middle Eastern, and Eastern Mediterranean cuisines as a foundational spread, dip, and sauce base. Its flavor is assertive: lactic, slightly sour, with a richness proportional to the fat content of the milk used.

The formula
1 kg whole-milk yogurt : 2–3 g fine salt (0.25–0.5% by weight)
Strain 12–24 h at 4 °C → yields ~450–550 g thick cream. Longer straining = denser, more concentrated flavor. For a firmer labneh ball, strain 24–48 h until rollable.
Identity
- Must be made from whole-milk yogurt — low-fat yogurt produces a chalky, thin result
- Must be strained, not whipped, to achieve the classical form
- Salt is optional but traditional; it accelerates whey release and enhances shelf stability
- The yogurt itself must be of quality: fresh, clean tang, live cultures, no stabilizers or gelatin that prevent whey from separating

Method
- 1Combine whole-milk yogurt with salt in a non-reactive bowl; whisk until fully dissolved and evenly distributed.Salt disperses uniformly before straining begins, ensuring even whey migration and consistent flavor throughout the finished cream.
- 2Lay a large square of double-layered cheesecloth (or a clean cotton napkin) inside a fine-mesh strainer set over a deep bowl; pour the salted yogurt into the cloth.The cheesecloth acts as a semipermeable membrane: whey passes through under gravity and osmosis, while yogurt solids (casein proteins, milk fat globules, bacterial culture) are retained.
- 3Gather the cloth corners, twist the top firmly, and tie or clip shut. Suspend over a deep bowl or place in a yogurt strainer. Refrigerate at 4 °C for 12–24 hours.Cold straining slows bacterial activity and prevents spoilage during the long whey-drainage window. The casein protein network must slowly compress and release interstitial liquid; rushing with heat or room temperature risks fermentation and grainy texture.
- 4After the resting period, unwrap and transfer the concentrated cream to a clean bowl. Taste and adjust seasoning.The cream concentrates as the whey drains — salt and acidity levels intensify. Re-tasting ensures correct seasoning before the component enters a finished dish.
- 5Store submerged in its own drained whey (or a thin layer of olive oil) in a sealed container at 4 °C, up to 14 days.Covering with whey or oil creates an anaerobic seal, extending shelf life and preventing surface drying and mold.
Techniques that matter
Osmosis and whey separation
Whey (water, lactose, soluble proteins, lactic acid) migrates out through the cheesecloth pores driven by gravity and concentration gradient. The yogurt solids — primarily casein micelles and fat globules — form an entangled protein matrix that retains its structure while expelling liquid.
Acid coagulation
Yogurt's live cultures produce lactic acid, lowering pH to the isoelectric point of casein (~pH 4.6). This denudes the casein micelles of their kappa-casein steric layer, allowing them to aggregate into a gel network that traps fat. Straining amplifies this effect by removing the liquid phase.
Syneresis control
Even after straining, the casein network continues to slowly contract and expel liquid (syneresis). Keeping the cream submerged in whey or oil minimizes this. Cold storage slows molecular mobility and reduces ongoing syneresis.
Rolling (labneh balls)
For the ball form, strain yogurt 36–48 h until firm enough to roll. Shape with oiled hands into 2–3 cm balls, submerge in olive oil with herbs or spices. This is the standard Levantine presentation and extends shelf life further.
Variations & derivatives
Labneh bi-Zayt (Lebanese labneh with oil)Levant
Labneh finished with a pool of extra-virgin olive oil, a sprinkle of za'atar and dried mint. The canonical form, served with warm pita.
Labneh with herbs (Iranian style)Iran
Fresh herbs — particularly mint, thyme, or tarragon — folded into the strained cream. Served as a mezze.
Labneh with melonGulf countries
Labneh spread on a plate, fresh melon balled and arranged alongside, drizzled with date syrup and rose water — a sweet-savory mezze.
Labneh rolled in za'atar or sumacPalestine / Jordan
The rolled balls are coated in za'atar (herbs + sumac + sesame) or plain sumac for acidity and color. Stored submerged in olive oil.
Greek-style strained yogurtGreece / US commercial
Similar process but typically unstrained yogurt thickened with milk solids or gelatin in commercial production. Does not have the same depth of flavor or true tang as labneh. Acceptable shortcut for a neutral yogurt cream base.

Substitutions
- Whole-milk yogurt (live-culture) → Kefir (full-fat) — Kefir has similar cultures and fat; straining yields a thinner, more acidic cream. Functional but distinct flavor.
- Whole-milk yogurt → Greek-style strained yogurt (store-bought) — Already partially strained. Will not yield the same concentration or quality. Acceptable in emergencies for a neutral base.changes result
- Fresh yogurt → Rehydrated dried yogurt powder — Reconstituted powder lacks live cultures and fresh acid development; the strained result is flat and one-dimensional.changes result
- Whole-milk yogurt → Sour cream — Sour cream is already a cultured, strained dairy product. It can substitute at a 1:1 ratio in sauce applications but is not a true yogurt cream base.
Troubleshooting
Yogurt cream is too thin and wet after 24 hours
The yogurt may contain stabilizers (gelatin, pectin, modified starch) that prevent whey from separating; alternatively, straining cloth may be too fine, or straining time insufficient. → Switch to a plain yogurt with no additives and a clean, single-layer cheesecloth. Extend straining to 36–48 hours. The cream should visibly thicken within 6–8 hours.
Grainy or chalky texture
Over-straining with too fine a cloth; using low-fat yogurt whose protein matrix is weak and breaks down; or the yogurt culture producing excessive acid that precipitates proteins too aggressively. → Use full-fat yogurt only. For a smoother texture, briefly whisk the yogurt before straining to break up any large casein clumps. Strain for fewer hours.
Off or sour smell after storage
Insufficient salt (if used), contamination from unwashed containers, or straining at room temperature allowing unwanted bacterial growth. → Ensure 0.25–0.3% salt by weight. Always use clean, sterilized glass containers. Refrigerate immediately after straining. If surface is off-color or slimy, discard the top layer; if odor is pervasive, discard the entire batch.
Excessive syneresis (wheying off) in finished dish
Adding acid (lemon juice, tomato) directly to an unstrained yogurt cream destabilizes the casein network rapidly, causing it to break. → In sauce applications, temper the labneh by whisking in a small amount of the hot liquid gradually before adding acid. Never pour acid directly into thick yogurt cream.
