Yorkshire Pudding · A thin, pourable baking-powder-free batter that produces a hollow, dramatically puffed shell through pure steam leavening. The classic English preparation uses beef fat drippings; the American variant is slightly sweeter and typically smaller. Essential as both a condiment vehicle and a bread course, it is a foundational element of British and Anglo-American cooking.

The formula

1:1:2 by volume (flour : eggs : milk)

One standard batch: 125g plain flour, 2 large eggs (~100g), and 250ml whole milk (~258g). A pinch of salt (≈2g) is assumed. By weight the ratio approximates 1:0.8:2. The batter should be thin enough to pour — roughly the consistency of heavy cream. The fat in the tin is separate and does not count toward the ratio.

Method

  1. 1Whisk eggs into milk until uniformly combined, then whisk in flour and salt until smooth. Do not overmix.Overmixing develops excessive gluten, which contracts during baking and deflates the puff. A few lumps are acceptable; they settle during resting.
  2. 2Cover and refrigerate batter for at least 30 minutes (up to 24 hours).Resting allows flour proteins to fully hydrate and gluten to relax, producing a more tender, evenly risen shell. Cold batter also increases temperature differential when hitting the hot fat.
  3. 3Place fat (dripping or oil) into a heavy-bottomed tin, muffin cups, or popover pan. Transfer to a 230°C/450°F oven for at least 15–20 minutes until fat is visibly smoking.The pan and fat must be above the boiling point of water (100°C/212°F) when batter is added. Immediate, violent steam generation is what drives the dramatic rise. Smoking fat indicates sufficient heat.
  4. 4Remove tin from oven, quickly pour or ladle batter into each cup (fill ½ to ⅔ full). Immediately return to oven.Minimizes heat loss from the tin. Batter against hot fat creates instant bottom steam and a thermal gradient that drives upward expansion. Each cup must be filled independently — do not let batter sit in a cold tin.
  5. 5Bake at 220–230°C/425–450°F for 20–25 minutes (popovers) or 30–35 minutes (large Yorkshire) without opening the oven door.Sudden temperature drop causes collapse. The oven spring (rapid expansion) must complete before the structure sets. Interior steam continues cooking the batter walls from within.
  6. 6Reduce oven to 180°C/350°F and bake a further 5–10 minutes until deep golden brown and crisp.Gentle finishing sets the structure and develops Maillard browning on the exterior. The interior should be hollow; if any wet batter remains, return briefly.

Techniques that matter

Steam Leavening

The primary rise mechanism. Water in the thin batter flashes to steam upon contact with the 230°C+ fat, expanding approximately 1,700-fold in volume. This forces the batter upward against gravity. No chemical leavener can replicate the force or the hollow interior.

Egg-Foam Structure

Air beaten into the batter during whisking, plus steam expansion, creates a foam. Eggs (especially yolks) provide lecithin as an emulsifier, helping the foam hold its structure as it sets from the outside in.

Maillard Browning

At 180°C+, amino acids react with reducing sugars in the flour to produce complex savory flavors and the characteristic dark-brown, crisp exterior. This occurs primarily in the final low-heat stage.

Troubleshooting

Pudding does not rise — flat, dense, or completely deflated

Fat was not hot enough. If the fat was below 180°C when batter was added, the flash-boil did not occur. Alternatively, batter was too thick or too cold.Ensure fat is visibly smoking before adding batter. Verify oven thermometer accuracy. Make certain batter rests refrigerated until the last moment.

Pudding rises then collapses immediately upon removal from oven

Structure was not set before oven door opened or temperature dropped. The walls were still gelatinous when support was lost.Do not open the oven door during baking. Reduce heat only in the final stage. Open door minimally at the end, quickly assess color, and remove immediately.

Tough, chewy, or rubbery shell

Overmixed batter developed excessive gluten, which contracts. Alternatively, too much flour relative to liquid makes a thick batter that cannot expand freely.Mix just until combined. Use the 1:1:2 ratio by volume precisely. Rest the batter to relax gluten before baking.

Greasy or soggy interior

Too much fat in the cup (fat should coat, not fill). Insufficient final baking at lower temperature to set and dry the interior.Use 2–3 tsp fat per cup, not tablespoons. Extend the final 180°C/350°F stage until the shell is completely dry and crisp throughout.

Storage

Keeps Batter: 24 hours refrigerated; Baked pudding: 4–6 hours at room temperature (refrigerate if longer).Batter: cover surface with plastic wrap pressed to the surface to prevent skin. Baked: store uncovered at room temperature to preserve crispness; do not refrigerate in sealed containers or it will become soggy. Reheat: Baked pudding: 180°C/350°F oven for 8–10 minutes until crisp and warm through. Microwave makes it soft.
