yufka

yufka · A thin, unleavened flatbread made from a stiff, low-hydration dough rolled to near-transparency and cooked on a dry metal griddle (sac). The defining characteristic is its extreme thinness — it should be translucent when held to light — and its ability to stack, fold, and serve as an edible vessel. Unlike pita, it contains no leavening; unlike phyllo, it is a single sheet, not layered. It is a foundational carrier bread across Turkey, Central Asia, and the Caucasus.

The formula

1000 g flour : 350 ml water : 10 g salt (≈35 % hydration, 1 % salt)

Oil is optional (30–50 g). Hydration is deliberately low to allow dry rolling without sticking. Higher hydration causes tearing; lower hydration causes cracking. The 35 % figure is the classical target.

Ingredients

Method

  1. 1Combine flour and salt. Add water gradually, mixing to a shaggy mass, then knead 8–10 minutes to a smooth, tight, dry dough.Low-hydration dough requires more kneading to develop gluten than wetter doughs. The smooth, tight surface signals adequate gluten for thin rolling.

Techniques that matter

Dry rolling

Yufka is rolled without flour on the work surface to prevent flour particles from scorching on the hot griddle, which would create bitter burnt specks and interfere with browning.

Sac cooking (dry-sear)

The sac (convex steel griddle) reaches temperatures that sear the surface in seconds. No fat is used; the dough's own moisture creates steam initially, then the surface caramelizes. This mimics tandoor-style contact cooking at the home kitchen scale.

Gluten relaxation (dough resting)

Kneading aligns gluten molecules under tension. Resting allows them to reorganize into a more relaxed state, reducing elasticity and increasing extensibility — the property that permits ultra-thin rolling without spring-back.

Steam-softening stack

Freshly cooked yufka is crisp; stacking creates a humid microenvironment that retrogrades the starches gently, converting the bread from brittle to pliable. This is the same principle behind wrapping fresh tortillas or steaming bread in general.

Variations & derivatives

bazlamaTurkey

Thicker than yufka — rolled to ~5 mm — and cooked on the same sac. Slightly leavened with a bit of yogurt or milk in some versions. Eaten immediately, often split and filled.

lavashArmenia / Caucasus / Iran

Comparable ultra-thin flatbread, cooked on a cushion or pillow (tanour) rather than a flat sac. Slightly different hydration but same principle.

tandır breadTurkey / Central Asia

Slapped directly onto the wall of a clay tandır oven — distinct from yufka's sac cooking, but related as a thin Anatolian flatbread tradition.

bolaniAfghanistan

Yufka-like dough filled with potato, leek, or lentils and pan-fried. Uses the same base dough but stuffed before cooking.

Troubleshooting

Dough cracks and tears when rolling thin

Hydration too low (less than 30 %) OR insufficient resting time OR too much flour incorporated during rollingAdd water 5–10 ml at a time to the dough and knead in; rest another 20 minutes. Roll on a clean, dry surface without flour.

Bread turns crisp and brittle after cooking instead of pliable

Storage

For freezing, interleave with parchment and freeze flat in a sealed bag. Thaw at room temperature in the bag to retain moisture. Reheat: Reheat frozen yufka directly on the sac for 30 seconds per side, or in a dry oven at 180 °C for 2–3 minutes. Room-temperature yufka needs only 15–20 seconds on the sac to regain pliability.
