Definition
Moulage (French: 'molding') is the professional pastry technique of building chocolate shells inside rigid or flexible molds using tempered chocolate. The process begins by pouring or brushing properly tempered chocolate — ideally at 27–29 °C (81–84 °F) for dark chocolate — into a clean, polished mold, allowing it to set briefly, then inverting the mold to drain the excess and leave a thin, even layer adhered to the cavity walls. This step is often repeated two or three times to achieve adequate shell thickness (typically 2–3 mm). Once fully crystallized, the shells are filled with ganache, praline, gianduja, caramel, or other centers, then sealed with a backing layer of tempered chocolate. Successful moulage depends on three pillars: correct tempering (proper Form V beta crystal structure), immaculate mold cleanliness and polish (to ensure gloss and release), and controlled working temperature (18–20 °C / 64–68 °F in the room). The technique is used to produce bonbons, Easter eggs, holiday figures, and decorative showpieces.

Mold types
Rigid polycarbonate molds are industry standard for production bonbons because their high polish transfers directly to the finished shell, producing a mirror gloss without additional buffing. Flexible silicone molds are used for larger figures and allow easy demolding of complex shapes, though they produce a matte surface. Thermoformed plastic molds occupy the middle ground — cheaper than polycarbonate, less flexible than silicone.
Common defects
Fat bloom (grey streaking) is the hallmark of under-tempered or thermally shocked chocolate. Failure to release from the mold usually indicates either poor tempering, residual moisture, or a scratched mold surface that disrupts the crystalline contact. Uneven shell thickness arises from non-uniform draining — rotating the mold on a vibrating table corrects this.
