Nuka / Nukadoko

A Japanese fermentation bed of salted, fermented rice bran used to pickle vegetables; a living microbial culture maintained daily and passed down through generations.
/NOO-kah / NOO-kah-DOH-koh/Japanese: ぬか (nuka, rice bran) + 床 (doko/toko, bed or base). The practice developed alongside widespread white rice milling in Japan, with evidence from the Edo period (17th century) and likely earlier.
Definition
Nuka refers to rice bran — the outer layer of brown rice milled away to produce white rice. Nukadoko is the fermented paste-bed built from nuka and used to pickle vegetables (nuka-zuke). To establish a nukadoko, raw rice bran is combined with salt (typically 13–15% by weight), water, and aromatics (kelp, dried chili, dried mustard, sometimes beer or apple for starter microbes) and allowed to ferment over one to four weeks, during which naturally occurring lactobacilli — primarily Lactobacillus plantarum and related strains — colonize the bed. Vegetables are buried directly in the nukadoko, where lactic acid (from bacterial activity), salt, and enzymes from the bran simultaneously preserve, acidify, and transform them over hours to days. The result, nuka-zuke, are crisp, tangy, complex pickles with a characteristic earthy-funky character absent from simple vinegar or salt pickles. Crucially, the nukadoko is a living ecosystem that requires daily maintenance: the bed must be turned (mixed thoroughly from the bottom) every day, or at minimum every other day, to prevent anaerobic conditions in the center that favor unwanted pathogens over the desired lactic bacteria. Surface kahm yeast — a white film — is a common challenge (see Kahm Yeast). Temperature controls fermentation speed: 20–25°C (68–77°F) is ideal; in summer the bed ferments aggressively and may need refrigeration; in winter fermentation nearly stops. Salt concentration is the primary safety governor. A well-maintained nukadoko develops over years into a hyper-complex microbial community with an irreplaceable depth of flavor — some family nukadoko are decades or centuries old. The bran substrate also contributes vitamin B1 (thiamine) to the pickles, historically important in regions where white rice consumption risked beriberi.

Daily turning is non-negotiable
Without daily mixing, the oxygen-depleted center of the nukadoko becomes an anaerobic environment favorable to butyric acid bacteria (which produce rancid, vomit-like off-flavors) and potentially harmful organisms. Turning once per day — reaching all the way to the bottom and folding thoroughly — maintains the aerobic perimeter microbiome and distributes metabolic heat evenly.
What to pickle and for how long
Cucumbers, daikon, eggplant (salted first to draw bitterness), carrots, and turnips are classic. Firm vegetables pickle in 6–24 hours at room temperature; softer or thicker items may take longer. Taste is the only reliable timer — the goal is pleasantly sour and complex, not overwhelmingly funky or salt-sharp.
Reviving a neglected nukadoko
A bed left unmixed for several days can be rescued if it smells sour but not rotten: scrape off any mold (distinct from white kahm yeast film), add fresh bran and salt, mix vigorously, and discard the first few batches of vegetables until the microbial balance restores. Pungent ammonia or putrid odors signal a bed that cannot be recovered.
B1 and nutrition
Rice bran is thiamine (vitamin B1) rich. Nuka-zuke vegetables absorb measurable quantities of B1 during fermentation — a nutritional byproduct that historically helped counteract beriberi in populations subsisting heavily on polished white rice.
