Off-Gas / Burping a Vessel

Deliberately opening a sealed fermentation vessel to release built-up carbon dioxide pressure before it deforms lids, blows seals, or creates dangerous internal pressure.
Definition
As lactic acid bacteria (and other anaerobic microbes) metabolize sugars during fermentation, they produce carbon dioxide as a byproduct. In a sealed vessel with no airlock, CO₂ accumulates and pressure builds. Off-gassing — colloquially called 'burping' — is the act of briefly cracking open the lid or loosening the seal to vent this pressure before it becomes structurally dangerous or forces brine out under the lid (which can introduce air and contaminate the ferment). The need to burp depends entirely on vessel design and lid type: (1) Mason jars with standard two-piece lids fitted with a water-lock airlock never need manual burping — the airlock vents automatically; (2) Mason jars with tight-fitting flip-top or solid lids used without an airlock can need burping twice daily at peak fermentation activity (typically days 2–4 at room temperature); (3) purpose-built fermentation crocks with water-channel lids self-vent; (4) cryovac (vacuum-sealed) bags will puff dramatically and can be burped by briefly opening a corner, or left until fermentation subsides. Signs that a vessel needs burping: the lid is visibly bowed outward, brine is being pushed toward the lid, or the vessel feels pressurized when touched. The frequency scales with temperature and sugar content — a high-sugar kombucha at 24°C may need burping every 8 hours; a sauerkraut at 18°C may need attention only once daily. Some fermenters deliberately skip airlocks and burp manually to monitor ferment progress by smell with each vent.

Notes
When NOT to burp
Vessels that already have a properly functioning airlock should never be manually burped — opening them introduces oxygen and potentially contamination. The only reason to open such a vessel is if the airlock becomes blocked (common when fermenting thick mashes or high-pulp juices) and needs to be cleared.
Headspace management
Leaving appropriate headspace — typically 3–5 cm in a Mason jar — reduces the urgency of burping by giving the CO₂ a reservoir before pressure becomes critical. Over-filling a jar to the brim with active ferment is the most common beginner mistake that leads to lid-blowing and brine overflow.
The smell diagnostic
Each burp is also an olfactory sample. A healthy lactic ferment smells tangy, fresh, and slightly sulfurous in early stages. Off-notes — strong putrefaction, chemical solvent, or persistent rank meat smells — signal a problem worth investigating before resealing.
