The perpetual wild-yeast and lactic-acid-bacteria culture maintained between bakes, refreshed on a regular schedule, with the removed portion (discard) repurposed in a wide range of recipes.
Definition
A sourdough starter is a living, self-sustaining ecosystem of wild yeast (principally Saccharomyces cerevisiae and Kazachstania humilis, formerly Candida milleri) and lactic acid bacteria (primarily Lactobacillus species, especially L. sanfranciscensis — now reclassified as Fructilactobacillus sanfranciscensis). The two organism types coexist symbiotically: wild yeasts produce carbon dioxide for leavening and ethanol; bacteria produce lactic and acetic acids that flavor the bread, lower pH to inhibit spoilage organisms, and make gluten more extensible via protease activity. Starters are maintained by regular feeding (refreshment): a portion of the existing culture is combined with fresh flour and water, and the remainder — the discard — is removed. The discard is not waste; it is mature, tangy, and teeming with organisms useful for flavoring non-yeasted baked goods, pancakes, crackers, pasta, and quick breads. A well-maintained starter stored at room temperature needs feeding once or twice daily; refrigerated starters can go 5–7 days between feedings, though their leavening activity diminishes proportionally and they need one or two room-temperature refreshments before building a levain. Hydration is flexible: 100% (equal weights flour and water by mass) produces a pourable starter that many bakers find easiest to read for activity signs (bubbles, rise, dome, fall); stiffer 50–70% starters tend to express more acetic acid and are traditional in some French, Italian, and German bakehouse cultures. A healthy starter smells yeasty, slightly acidic, and mildly alcoholic; an over-fermented one smells strongly of acetone or nail polish remover, signaling the yeast population has starved and bacterial byproducts dominate.

Discard applications
Discard is a mature culture: highly acidic, enzymatically active, and leavened with some residual gas. Because its yeast population is stressed and competition with bacteria is high, it cannot reliably leaven yeasted bread, but it excels in recipes that benefit from its tangy flavor and enzyme activity without depending on it to rise: pancakes, waffles, crumpets, flatbreads, crackers, shortbread, pasta dough, and even chocolate cake. Discard frozen in ice-cube trays can be thawed weeks later for the same purpose.
Reading starter health
A float test (spooning a small amount into water) indicates sufficient gas pockets but is an imperfect proxy — a healthy starter can fail to float if it has already peaked and begun collapsing. More reliable signs are: a consistent 2–3× rise within 4–8 hours of feeding at room temperature, a domed (not flat or sunken) crown at peak, and a complex yeasty-sour (not solvent-sharp) aroma. A gray liquid on the surface ('hooch') is ethanol and acidity by-product, a sign of hunger — stir it in or pour it off and feed promptly.
Maintenance schedules
Room-temperature maintenance (feeding 1–2× daily) keeps the starter in high activity but demands daily attention. Refrigerator storage (4°C / 39°F) slows fermentation dramatically, requiring feeding only once a week for most flours; before baking, allow 1–2 room-temperature refreshments to fully revive yeast population and activity. Freezing is possible for long-term storage; dry-flake or freeze the starter thin, then revive by rehydrating and feeding over several days.
