Velveting

A Chinese technique in which protein is coated in a slurry of starch, egg white, and optionally baking soda before blanching in oil or water, yielding a silky, tender texture impervious to high-wok heat.
/VEL-vet-ing (English loan adaptation of 过油 guò yóu, Mandarin: gwaw YOU)/Chinese culinary technique — the English term 'velveting' was coined in English-language translations of Chinese restaurant cooking in the mid-to-late 20th century. The underlying Chinese practice (过油, 水滑) is centuries old in professional banquet cooking, documented in Qing-dynasty kitchen manuals.
Definition
Velveting (过油, guò yóu, 'passing through oil') is a pre-treatment technique developed in Chinese professional cooking to protect delicate proteins — particularly thinly sliced chicken breast, pork loin, beef flank, and shrimp — from the fierce, desiccating heat of wok cookery. The protein is first tenderized with a marinade of cornstarch or potato starch, egg white (for poultry and pork) or whole egg (for beef), rice wine or Shaoxing wine, and salt. For tougher cuts and beef, a small amount of baking soda (sodium bicarbonate) is added, which raises the pH of the meat surface, disrupting myosin cross-links and causing the protein to absorb and retain more moisture during cooking — resulting in dramatically more tender texture. After marinating for 15–30 minutes, the coated protein is blanched in large quantities of gently heated oil (typically 90–120°C / 195–250°F) in loose, separated pieces, removed as soon as the exterior turns opaque and just barely cooked, then drained. This intermediate step — the 'velveting pass' — sets the starch coating as a protective barrier that subsequently shields the protein in the wok, allowing the cook to use maximally high heat for browning and sauce development without overcooking the interior. An alternative method, 'water velveting' (水滑, shuǐ huá), blanches the coated protein in near-simmering salted water rather than oil — less rich, cleaner tasting, and more practical for home kitchens without a large quantity of oil. Both methods produce the defining sensory signature: protein so smooth and supple that it slides across the tongue like satin — the 'velvet' of the name.

The role of baking soda
Baking soda (sodium bicarbonate) is used in the velveting marinade almost exclusively for beef, and occasionally for pork. At concentrations of roughly 0.5–1% by weight, it raises the muscle's surface pH from about 5.5 to above 7, disrupting actin-myosin interactions and dramatically increasing water-holding capacity. The result is meat that stays moist and tender even after exposure to 300°C wok heat. Too much baking soda (above 2%) creates a soapy, metallic off-flavor; the marinade should be rinsed off before cooking in some recipes to mitigate this.
Oil temperature is critical
If the velveting oil is too hot (above 150°C / 300°F), the starch coating sets immediately and traps air bubbles that puff and separate from the protein. Ideal temperature is 90–120°C (195–250°F), which feels barely warm for deep-frying but is sufficient to set the coating as a smooth, continuous barrier. The pieces must enter at room temperature and be separated immediately so they do not clump.
Water velveting for home cooks
Water velveting (水滑, shuǐ huá) achieves a nearly identical textural result without requiring a large pot of hot oil. The coated protein is stirred into a large quantity of near-simmering (80–85°C) lightly salted water and moved gently until just opaque. The coating, though less sealed than an oil-set version, still provides sufficient protection for stir-frying. The method is standard in many Cantonese home kitchens and restaurant-level health-conscious cooking.
