Carbonara (Egg Yolk to Whole Egg Ratio)

2–3 yolks per 1 whole egg per 100 g pasta — a high-yolk emulsion loosened with hot starchy pasta water to coat without scrambling.
Carbonara is a Roman pasta sauce built exclusively on an egg-and-cheese emulsion — no cream, no butter. The ratio of yolks to whole eggs determines richness and scrambling risk: yolks coagulate between 65–70 °C and contain enough lecithin and fat to form a stable, glossy emulsion; the whole egg's albumin whites set more quickly and contribute a firmer texture if present in excess. The starchy pasta water (the true secret of the dish) lowers the viscosity of the emulsion, prevents clumping, and extends the temperature window before scrambling. Getting the sauce to coat the pasta rather than clump into curds is a function of temperature control, not recipe magic.
The proportions
- 2–3 per 100 g pasta
- Egg yolks — More yolks = richer, more golden, more emulsified sauce; the classic Roman standard is 1 yolk per person + 1 extra
- 1 per 100 g pasta (or per 2 servings)
- Whole egg — Provides additional liquid and protein for body; can omit for an all-yolk version (richer but less margin for error)
- 30–40 g per 100 g pasta
- Pecorino Romano (finely grated) — The canonical cheese; can use 50/50 Pecorino and Parmigiano Reggiano for a less sharp result — common in modern Roman restaurants
- 50–75 g per 100 g pasta
- Guanciale (cured pork cheek) — The only traditional cured pork; its rendered fat becomes part of the emulsion. Pancetta is an acceptable substitute; bacon is not traditional
- 30–60 ml added incrementally
- Starchy pasta cooking water — The critical emulsifying agent; use heavily salted, properly starchy water (1 L per 100 g pasta, last 2 minutes of cook)
- 1–2 tsp cracked per serving
- Black pepper (freshly ground, coarse) — Not garnish — integral to the dish's flavor identity; carbonara means 'charcoal burner style', referencing the heavy pepper coat
Method
Render guanciale in a cold pan, bringing it up slowly to release fat without burning; remove pan from heat when crispy. Whisk yolks and whole egg with grated cheese and coarse pepper until thick. Cook pasta to 1 minute before al dente in well-salted, starchy water. Reserve 200 ml pasta water before draining. Toss hot drained pasta in the guanciale pan OFF heat (or on very low), adding guanciale fat. Add a splash of pasta water and toss until the pasta cools slightly — around 65 °C. Remove pan entirely from heat, pour egg-cheese mixture over pasta, and toss vigorously, adding pasta water tablespoon by tablespoon until the sauce is glossy and coats the pasta like a loose, flowing cream. Serve immediately.
Tips
- Temperature is the only variable that matters at the moment of sauce-making. The egg must never exceed 70 °C or it scrambles into lumps. Removing the pan from heat entirely before adding the egg mixture is the safest technique for home cooks.
- Pasta water is the secret liquid: it carries starch (a natural emulsifier) that coats the pasta and thickens the sauce without cooking it. Add water in small increments — you want a flowing, not soupy, consistency.
- Grate cheese on the finest setting (Microplane-style). Coarse-grated Pecorino does not dissolve into the egg; it clumps into chewy flecks. The cheese should virtually disappear into the sauce.
- Pasta must be starchy — don't rinse it. Cook it in properly salted, well-used water (pasta water starchier toward the end of the pot's use). Reserve the water 2–3 minutes before the pasta is done — it's thickest then.
- Don't use cream. Cream stabilizes the egg against scrambling, but it dilutes the flavor and produces a thick, sauce-in-a-pot consistency rather than the glossy, cling-to-pasta emulsion that defines the dish.
- Guanciale fat is part of the emulsion. Don't drain it. The rendered pork fat, pasta starch, egg lecithin, and cheese proteins are all emulsifiers working together — removing any one weakens the sauce.
Variations
- All-yolk carbonara
4–5 yolks per 100 g pasta, no whole egg; richer color, deeper egg flavor, smaller margin against scrambling — restaurant standard
- Spaghetti carbonara
Classic format; rigatoni, mezze rigatoni, and tonnarelli are also traditional Roman formats
- Carbonara with Parmigiano only
Less sharp, more neutral — preferred outside Rome and in international contexts; slight loss of traditional character
- Pancetta variant
Pancetta replaces guanciale; leaner, less gelatinous fat, less savory depth — widely used outside Lazio
- Truffle carbonara
Black truffle shaved over the finished dish or truffle paste stirred into the egg mix — a luxury Roman restaurant staple; egg amplifies truffle aroma

Why pasta water emulsifies
Properly cooked pasta releases amylose and amylopectin starch into the cooking water — the same starch molecules that make pasta gel. These dissolved starches act as a secondary emulsifier alongside the egg's lecithin, extending the temperature window at which the sauce remains fluid and helping it cling to pasta rather than pool at the bottom of the bowl. A sauce made with plain water (or cream) lacks this starch network and separates or pools. This is why carbonara made correctly — with the right pasta water — holds for 30–60 seconds, giving you a window to plate and serve.
The cream question
Cream is absent from every traditional Roman carbonara recipe, yet it appears in countless restaurant and cookbook versions outside Italy. The reason for its use is practical: cream's fat emulsifies the sauce and raises the temperature threshold before scrambling, making the dish far more forgiving for inexperienced cooks. The tradeoff is that cream dilutes the sharpness of Pecorino, coats the palate more heavily, and produces a sauce that coats the pasta like a cream sauce rather than a glossy protein-starch emulsion. Both can be delicious; only one is carbonara.
