Countertop convection that crisps with little or no oil

A compact convection oven that blasts hot air for crisp results with barely any oil. Brilliant for reheating leftovers, roasting vegetables, and weeknight chicken. Don't overcrowd the basket — food needs space for air to circulate and crisp.

An air fryer is, in plain terms, a small, very fast countertop convection oven: a powerful fan and a tight heating element blast hot air around a perforated basket, crisping the surface of food the way deep-frying does but with a fraction of the oil — often just a light spray or none at all. The compact cavity preheats in moments and concentrates heat, so frozen fries, chicken wings, and roasted vegetables come out crisp and browned far faster than they would in a full-size oven, and without heating up the whole kitchen.

It's earned its place as a weeknight reheating and quick-cooking machine: leftover pizza and fried chicken come back crisp instead of soggy, vegetables roast in fifteen minutes, and a couple of chicken breasts cook through with a browned exterior. The one rule that makes or breaks results is airflow — don't overcrowd the basket. Food needs space and a shake or flip partway through, or it steams in its own moisture instead of crisping.

Types & varieties

Basket air fryer

The classic pull-out drawer with a perforated basket. Simple, fast, and easy to shake mid-cook; the most popular form for one or two people.

Dual-basket

Two independent baskets cook two foods at different temperatures and times, syncing to finish together. Ideal for a protein and a side at once.

Oven-style / toaster-oven hybrid

A larger boxy unit with racks and a rotisserie that air-fries, toasts, and bakes. More capacity and flexibility, a bigger countertop footprint.

How to use it

Give food room and a little fat, and turn it partway through. The air fryer crisps by moving hot air over every surface, so anything blocking that flow comes out pale and soft.

  • Arrange food in a single layer with space between pieces — crowding steams instead of crisps
  • Shake the basket or flip the food halfway through for even browning
  • Toss vegetables and proteins in a little oil; a light spray is plenty for most things
  • Preheat a couple of minutes for the crispest results, and cook in batches rather than overfilling

Care and gotchas

The nonstick basket and a clear airflow path are what keep it working well. Clean it after greasy cooks and don't let smoke or batter undermine it.

  • Wash the basket and tray after each use; baked-on grease smokes on the next cook
  • Use wood or silicone tools and avoid scratching the nonstick coating
  • Wet batter drips through the basket and burns — use a dry coating or breadcrumbs instead
  • Don't block the rear fan or air vents; a perforated parchment liner is fine, a solid one is not

Tips & pitfalls

  • A light spritz of oil is the secret to crispness — bone-dry food browns unevenly.
  • It's the best leftover reviver in the kitchen: pizza, fries, and fried chicken come back crisp, never rubbery like the microwave.
  • Cut food to a uniform size so everything finishes at the same time.
  • Cooking times run shorter and hotter than the oven — check early until you know your machine.
  • A tablespoon of water in the drawer under fatty foods cuts smoking by stopping grease from scorching.
