Traps steam under pressure to cook beans, stocks, and braises in a fraction of the usual time. Modern electric models are foolproof; stovetop versions are faster and run hotter. Always let pressure release fully before opening.
A pressure cooker is a sealed pot that traps steam and lets its pressure build, raising the boiling point of water well above 100 °C. That superheated environment cooks food dramatically faster — beans, stocks, tough braises, and risotto that would take hours on the stove are done in a fraction of the time, while the sealed vessel keeps flavors and nutrients in rather than boiling them off. It is, quietly, one of the most efficient tools in the kitchen, and the modern generation has made it far less intimidating than its hissing, jiggling ancestors.
There are two families. Stovetop pressure cookers run hotter, reach higher pressure, and cook fastest, but need you to watch and adjust the heat. Electric models (the Instant Pot among them) trade a little speed for foolproof, hands-off automation. With either, the cardinal rule is patience at the end: let the pressure release fully — naturally or via the valve — before you ever attempt to open the lid, because the contents are hotter than boiling and under real pressure.
Types & varieties
Reaches higher pressure and cooks fastest, with a quick stovetop boil to come up to pressure. Needs hands-on heat management but gives the most control and speed.
Self-regulating and timed — set it and walk away. Slightly lower pressure means marginally longer cooks, but far more forgiving and safer for beginners.
Old 'jiggle-top' weighted-valve cookers vent visibly and audibly; modern spring-valve models are quieter, hold pressure more precisely, and have redundant safety locks.
How to use it
Always include enough liquid to generate steam, never overfill, and choose your release method to match the food. Coming up to pressure and releasing it are part of the total cook time.
- Add the minimum liquid the manufacturer specifies — there's no evaporation, so recipes need less
- Don't fill past two-thirds (half for foaming foods like beans, grains, and pulses) or the valve can clog
- Natural release (let it cool and drop on its own) for meats and foamy foods; quick release for crisp vegetables
- Brown and sauté first (most electric models have a sauté mode) before sealing for the pressure cook
Safety and care
Modern cookers have multiple safety interlocks, but the gasket and vents are what keep them sealed and safe. Keep them clean and never force the lid.
- Never open until pressure has fully released and the safety float has dropped — opening or forcing a still-pressurized lid can erupt scalding contents and steam across the kitchen
- Always include the minimum liquid the manufacturer specifies; running it dry can scorch the food and over-pressurize
- Direct the steam-release jet away from yourself, cabinets, and anyone nearby — keep children well clear during a release
- Keep the steam valve and gasket clean and unobstructed — a blocked vent is the real hazard
- Inspect the rubber gasket for cracks or odors and replace it every year or two
- Don't pressure-cook thick purées, applesauce, or pasta sauces that can sputter and block the valve
Common uses
Tips & pitfalls
- Timing starts when full pressure is reached, not when you turn it on — factor in the come-up and release time.
- Dried beans go from rock-hard to creamy in under an hour, no overnight soak required — and pressure cooking reaches a high enough temperature to neutralize the raw kidney-bean toxin (lectin), so unsoaked is safe here, unlike a slow cooker on Low, which can leave it active.
- A natural release finishes cooking gently and keeps meat tender; a quick release stops vegetables before they go soft.
- Quick-release foamy or starchy foods carefully — they can spit hot liquid through the valve.
- Keep the gasket and lid in a drawer or upside-down between uses so the seal doesn't retain odors.
