Whether it runs on gas, electric coils, smooth radiant glass, or magnetic induction, the whole craft of stovetop cooking comes down to one skill: managing heat. The difference between a sauce that breaks and one that emulsifies, between caramelized onions and burnt ones, is almost always a matter of how well you read and adjust the burner under the pan.
No two cooktops behave alike. Gas gives you an instant, visible flame you can dial up or down by eye; induction is faster and more precise but only works with magnetic pans; electric coils and radiant glass hold residual heat long after you turn them down — so when you 'lower the heat' on a coil burner the change lags and a delicate sauce can scorch before the burner catches up; the fix is to move the pan off the heat for a quick adjustment. The single most useful thing you can do is learn how your own lowest setting behaves — simmer a pan of water and dial it down to find the lowest setting that still keeps a gentle bubble breaking the surface, the place where stews, sauces, and custards quietly come together.
Types & varieties
An open flame you control by sight, responsive instantly and able to lick up the sides of a wok or roast a pepper directly. Less efficient and harder to hold at a true low simmer; the flame heats the pan's edges as much as its base.
A magnetic field heats the pan itself, not the surface — fast, precise, energy-efficient, and cool to the touch around the pan. Requires ferrous cookware and can 'pulse' at very low settings on cheaper units.
Electric elements glow under a smooth glass top. Easy to wipe clean and works with any flat pan, but slow to respond and holds residual heat after switching off.
The old-school exposed spiral. Cheap and rugged, works with any cookware, but slow to change temperature and uneven across the coil.
How to manage the heat
Match the burner to the pan and the task, then commit to the temperature before food goes in. A pan that's properly preheated sears; one that isn't steams and sticks.
- Match flame or zone size to the pan base — a flame creeping up the sides wastes heat and scorches handles
- Preheat the empty pan before adding oil, then the oil before the food, for a clean sear and less sticking
- Learn your lowest setting — a real simmer is just a few bubbles, not a rolling boil
- Use a flame tamer or move to a smaller burner if your low setting still scorches delicate sauces
How to care for it
Spills baked onto a hot surface are far harder to remove than ones wiped while warm. Keep the burners and zones clean so heat transfers evenly.
- Wipe a glass top while it's just warm (not hot) with a soft cloth; use a dedicated cooktop cleaner for stuck-on residue
- Lift gas grates and burner caps to clean underneath; a blocked port gives a weak, uneven flame
- Never use abrasive pads or scrapers on glass-ceramic — they scratch permanently
- Don't slide heavy cast iron across an induction or glass surface; lift it to avoid scratches

- Get the pan hot first, then add oil — oil added to a cold pan and heated slowly is more likely to make food stick.
