Carbonating dissolves carbon dioxide into a chilled liquid under pressure, giving it sparkling fizz and a lively prickle on the tongue. It's used for house sodas, sparkling water, and even carbonated fruit. Keep the liquid very cold — gas dissolves far better and holds longer when chilled.

The colder the liquid, the more gas it holds and the longer it stays fizzy, because CO₂ dissolves far better at low temperatures and high pressure. Home cooks carbonate water and juices with a soda machine or CO₂ charger, and the more adventurous carbonate fruit or cocktails. Beyond the fizz, dissolved CO₂ forms a little carbonic acid, which adds a subtle tartness that brightens and refreshes.

How to do it

    Chill the liquid

    Get the liquid as cold as possible without freezing — cold liquid absorbs and holds far more gas.

    Use a clean carbonator

    Load a soda machine bottle or a CO₂ charging system, making sure seals are tight.

    Charge with CO₂

    Introduce the gas under pressure, following your device's directions for the bubble level you want.

    Let it dissolve

    Give the gas a moment to dissolve into the liquid, sometimes with a gentle swirl or a rest under pressure.

    Release pressure slowly

    Vent the bottle gradually so the dissolved CO₂ doesn't rush out and foam over.

    Serve cold

    Pour and serve while still cold, when the carbonation is at its liveliest.

Why cold and pressure

Gas solubility in a liquid rises as temperature falls and as pressure increases — both push CO₂ into solution. Warm liquids barely hold gas, which is why a warm soda goes flat fast. Once you release the pressure, the dissolved CO₂ starts escaping as bubbles, forming a little carbonic acid on the way that gives carbonated drinks their faint, refreshing tartness.

Safety

Pressure and gas demand a little care.

  • Use only food-grade CO₂ and equipment rated for carbonation pressure.
  • Never over-pressurize bottles beyond their rating — they can rupture.
  • Release pressure slowly to avoid eruptions, especially with sugary or pulpy liquids.
  • Sugar, pulp, and warmth all make carbonated liquids foam over more violently.

Tips & pitfalls
