An Ivorian staple made from cassava that has been fermented with a live-culture starter, pressed, hand-granulated, and steamed into light, separate, couscous-like beads with a clean, mild sourness.
Identity criteria
- 1Made exclusively from whole grated cassava pulp (Manihot esculenta) — not cassava flour, starch, or any other base
- 2Must undergo lactic fermentation driven by a reserved prior-batch starter, which develops the defining sour note and detoxifies cyanogenic glucosides

- Lactic fermentation
- Fermentation is the irreplaceable step: it converts cassava's cyanogenic glucosides to harmless compounds, produces the lactic acid that defines the subtle sourness, and begins breaking down the starch structure so the mass granulates cleanly instead of forming a sticky dough
- Pressing / dehydrating
- After fermentation the wet pulp must be pressed firmly to remove most free moisture; insufficient pressing leaves the mass too wet to granulate into discrete beads, producing clumps and a gummy final texture
- Hand-granulation (crumbling through fingers or a coarse sieve)
- The pressed, semi-dry cassava is worked into uniform small granules before steaming; this is the physical operation that produces the couscous-like form and cannot be replicated by simply steaming an un-crumbled block

- Steam cooks the starch granules while keeping them dry enough to stay separate; submersion in boiling water causes over-hydration and starch gelatinisation, collapsing the granules into a paste

Common mistakes

- Insufficient pressing after fermentation — excess moisture prevents proper granulation and causes granules to fuse into a gummy mass during steaming
- Over-steaming — prolonged steam exposure continues to hydrate and gelatinise the starch, collapsing the separate granules into a sticky cake
- Skipping the granulation/sieving step — steaming an un-crumbled block produces uneven lumps, not couscous-like beads
- Applying couscous preparation logic (boiling water absorption ratios, resting under a cloth) — attiéké is steamed over water, not hydrated in it
- Describing the dish as 'cassava couscous' and then treating it as interchangeable with North African couscous in a recipe — different base, different fermentation, different method
Provenance
Attiéké is indigenous to the Adjoukrou people of the lagoon coast of southern Côte d'Ivoire, particularly around Jacqueville and Dabou, where the fermentation knowledge has been transmitted by women across generations. It spread through Abidjan's maquis network in the mid-twentieth century to become the de-facto national staple side and has since diffused across West Africa and into global diaspora communities. Côte d'Ivoire advanced a UNESCO Intangible Cultural Heritage nomination in 2023 to formally document its sole origin.
