Substitutions

  • Game/venisonAdditional beef and porkadmissible

Acceptable when game is unavailable, but loses some of the traditional depth.

  • Sweet paprikaGeneric chili powderinadmissible

Wrong flavor profile — destroys the paprika identity central to the dish.

  • Three meatsSingle meatinadmissible

A single-meat stew is no longer bograč by definition.

Common mistakes

  • Using only one type of meat instead of three
  • Scorching the paprika so the stew turns bitter
  • Skimping on onions, leaving the stew thin and watery
  • Treating it as a quick stew rather than a long open-fire simmer
