Bol Renversé
Also: Magic Bowl, Upside-down bowl
A Mauritian Sino-Creole dish in which rice, soy-glazed stir-fried meat and vegetables, and a fried egg are layered in a bowl and dramatically inverted onto a plate so the egg crowns the dome.
Identity criteria
- 1Assembled by packing components into a bowl, then flipping it upside-down onto the plate
- 2A fried egg sits at the very bottom of the bowl so it becomes the top of the finished dome
- 3Steamed white rice forms the base layer (becoming the bottom after inversion)
- 4Stir-fried meat and Chinese greens in a soy-based glaze in the middle
- 5Chinese-Mauritian (Sino-Mauritian) cooking style with soy, oyster and garlic seasoning

Substitutions
Chicken → Beef, pork or shrimpadmissible
Any thin-sliced protein works in the stir-fry.
Fried egg on top → Omitting the egginadmissible
The crowning egg is the signature — without it the inversion theatre and identity are lost.
Inverting the bowl → Serving components plated flatinadmissible
Without the flip it is just a rice bowl, not bol renversé.
Common mistakes
- Layering components in the wrong order so the egg ends up buried
- Overcooking the egg so the yolk doesn't run over the dome
- Letting the rice steam too wet so the dome collapses when flipped
- Overcrowding the wok so the stir-fry stews instead of searing
Provenance
A signature dish of Mauritius's Sino-Mauritian community, fusing Chinese stir-fry technique with island ingredients; settled as a Mauritian creation.
