A Catalan and Andorran thin, oblong flatbread baked with a topping of roasted vegetables, typically escalivada-style aubergine and pepper, finished with salt fish or cured sausage.
Identity criteria
- 1A flat, oven-baked oblong base of unleavened or lightly leavened bread dough, thinner and crisper than pizza
- 2Topped before baking, never sauced with tomato in the pizza sense
- 3Roasted (escalivada) aubergine and red pepper form the characteristic vegetable bed
- 4Finished with salted fish (anchovy or sardine) and/or cured sausage (botifarra)
- 5No cheese — it is not a Mediterranean pizza
