Substitutions
olive oil → sunflower oiladmissible
Works mechanically but loses the characteristic Andalusian flavour
small fresh fish → large fillets in thick batterinadmissible
Becomes fish-and-chips style, not pescaíto frito
Common mistakes
- Using a thick batter instead of a light flour dusting
- Oil not hot enough, leaving the fish greasy and soggy
- Overcooking small fish until dry
- Letting it sit so it loses its crunch — it must be eaten straight from the fryer
Provenance
A defining dish of Andalusia, especially the coasts of Cádiz and Málaga, born of abundant Atlantic and Mediterranean small fish.
