Roast Pig
Also: Whole roast pig, Puaka, Pig roast
A whole pig roasted over open coals or in an earth oven ('umu) until the skin crackles and the meat falls from the bone, serving as the ceremonial centrepiece of a Tongan feast.
Identity criteria
- 1Whole, intact pig — not jointed or portioned before cooking
- 2Cooked over open fire or buried in an earth oven ('umu) lined with hot stones
- 3Crisp, blistered skin (crackling) over fork-tender meat
- 4Presented whole as the feast centrepiece, not plated individually
- 5Seasoned simply — the pig and smoke, not a marinade, define it
Components
Technique
- Open-fire spit roasting
- Radiant heat blisters the skin while slowly cooking the deep meat evenly
- Earth-oven ('umu) baking
- Buried hot stones create a moist, smoky chamber that steam-roasts the whole animal
- Self-basting
- The pig's own rendering fat keeps the meat moist and crisps the skin without added sauce

Common mistakes
- Portioning the pig before cooking, losing the whole-animal identity
- Cooking too hot too fast so skin burns before meat cooks through
- Skipping the long, even low heat that makes the meat tender
- Over-seasoning with marinades that mask the smoke and pork flavor
