Substitutions
Sesame seeds → Nigella seedsadmissible
Either is an acceptable topping
Commercial yeast → Sourdough leavenadmissible
Both produce a valid leavened loaf
Tandir oven → Very hot home oven with stoneinadmissible
Approximates it but loses the wall-char and authentic crust
Wheat flour → No leaven / cracker doughinadmissible
Unleavened dough is no longer tandir bread
Common mistakes
- Baking unleavened so the bread is flat and cracker-like
- Oven not hot enough to blister and char the crust
- Over-proofing so the dough collapses on the wall
- Treating it as the same as thin lavash
