The formula

1:1:0.5 soy sauce : cane vinegar : water by volume; aromatics per 100 g protein

Scale liquids to protein weight. For 500 g chicken: 75 ml soy sauce, 75 ml cane vinegar, 30 ml water, ~5 garlic cloves, 2 bay leaves, 1 tsp whole peppercorns. Yields ~350 g braised meat plus 80–100 ml lacquered sauce.

Identity

  • Cane vinegar — not white distilled — is non-negotiable for authentic sourness profile

Method

Acid-protein coagulation control

The acid initially causes surface proteins to tighten — similar to a light cure. Keeping the braise at a vigorous boil for the first 2–3 minutes and then immediately dropping to low simmer prevents toughening, allowing acid to penetrate and flavor the protein slowly.

Fat emulsion (sauce lacquer)

Rendered pork fat, soy sauce (containing emulsifiers from fermented soybeans), and vinegar form a loose emulsion during reduction. As liquid evaporates, this emulsion concentrates and clings to the protein surface, creating the characteristic glossy finish.

Fond development and deglazing

The fond left after rendering pork is rich in Maillard reaction products. Adding soy sauce first leverages its water content to lift these compounds into the braise — a built-in deglaze that enriches the entire sauce.

Substitutions

Troubleshooting

Bitter, sharp taste in the finished dish

Vinegar was added to the pan before the garlic was fully bloomed, or the braise was simmered uncovered over too high heat too early, concentrating harsh acetic compounds.Ensure garlic is fragrant before introducing vinegar. Keep the braise covered during the initial low-simmer phase. If bitterness has developed, add 1–2 tbsp water and a pinch of sugar, then reduce again gently.

Dry, tough, or rubbery meat

Acid introduced before the meat was at temperature caused surface protein to tighten excessively, or the braise ran dry and the meat scorched.Start with large, bone-in pieces. If tough, add 50 ml water, re-cover, and braise for another 10 minutes at the lowest simmer. A short rest off-heat allows juices to redistribute.

Sauce is overly salty and syrupy

Soy sauce ratio was too high relative to vinegar and water, or reduction was taken too far. Also occurs with low-quality soy sauce.Add 2–3 tbsp water and a small splash of vinegar, then simmer gently for 2–3 minutes. Taste and adjust. Weigh or measure liquids rather than eyeballing.

Storage

Keeps 5–7 days refrigerated; up to 3 months frozen (as braise with meat)Store in an airtight container. The braise improves after 24 hours as flavors meld. For frozen storage, cool completely before sealing. Reheat: Thaw overnight in refrigerator. Reheat covered over medium-low heat for 8–10 minutes, spooning sauce over meat. To crisp the exterior, separate meat from sauce and sear pieces in a dry hot pan for 2–3 minutes per side.
