Finishing & garnish
Akhkhyla
Akhkhyla · A dry, equal-weight spice blend from Abkhazia used as a finishing seasoning and flavoring base for meat, fish, and vegetable dishes, and as an ingredient in sauces such as walnut (sauce) and sour-plum (Abkhazian) sauces.

The formula
Equal parts (1:1:1:1:1:1:1) of 7 spices & salt, 50 g each
Each of the seven ingredients is weighed at 50 g; total yield 350 g. Equal-weight ratio is the defining structural rule.
Identity
- Dry seasoning/spice blend (reusable base, not a finished dish)
- Garlic-free — this is the key distinction from Svanetian salt (svanuri marili)
- Features blue fenugreek, a signature Georgian highland flavoring
- Abkhazian in origin and use, distinct from but parallel to Svanetian seasoning tradition
- Equal-weight (1:1:1:1:1:1:1) formula across all seven components
Ingredients
| Seasoning | Coriander seed (crushed) | 50 g; provides warm, citrusy backbone |
| Seasoning | Dill seed (crushed) | 50 g; adds anise-like aromatic lift |
| Flavor | Dried basil | 50 g; contributes sweet herbal notes |
| Flavor | Dried summer savory | 50 g; peppery-minty herb typical of Caucasian cooking |
| Flavor | Blue fenugreek | 50 g; signature Georgian flavor, nutty/maple-like — not interchangeable with regular fenugreek |
| Flavor | Hot dried red pepper | 50 g; supplies the heat |
| Seasoning | Salt | 50 g; the only non-aromatic, anchors and preserves |
Method
- 1Weigh out 50 g of each of the seven ingredients (coriander seed, dill seed, basil, summer savory, blue fenugreek, hot dried red pepper, salt). The equal-weight 1:1:1:1:1:1:1 ratio is the defining structural feature; deviating breaks the balance.
- 2Crush the coriander and dill seeds if not already cracked.Releases the volatile oils so flavor disperses evenly through the dry mix.
- 3Combine all ingredients on a flat food preparation surface (board or large tray).A wide, shallow surface allows manual folding and visible inspection of evenness.
- 4Mix thoroughly with a spoon, turning the pile repeatedly, until color and texture are uniform throughout.Salt and fine red pepper settle first; only sustained mixing guarantees every pinch delivers the same flavor profile.
- 5Transfer to a clean, dry, airtight jar.Dry spice blends lose potency to air, light, and moisture; sealing preserves aroma for months.
Techniques that matter
Dry hand/spoon mixing of pre-ground or crushed spices
No heat or liquid is applied; the goal is homogenous distribution, not extraction.
Equal-weight ratio construction
Because no single ingredient dominates, the blend can be dosed by feel without rebalancing.
Variations & derivatives
Svanetian salt (svanuri marili)Svaneti, Georgia
Closest cousin; same spice family but garlic is included — the defining contrast with Akhkhyla.

Substitutions
- Blue fenugreek → Regular (yellow) fenugreek — Loses the characteristic nutty/maple aroma; only acceptable as a last resort.changes result
- Hot dried red pepper → Other hot red chili powder — Heat level varies; adjust to maintain the 50 g balance.
- Summer savory → Thyme (winter) — Not botanically equivalent — flavor profile is shifted toward the Mediterranean.changes result
Troubleshooting
Flavor is uneven — some bites taste mostly of salt, others mostly of pepper.
Insufficient mixing; salt and fine chili settle to the bottom. → Tip back onto a flat surface and remix thoroughly until color is uniform.
Blend has lost aroma after a few weeks.
Exposure to air, light, heat, or moisture; spices pre-ground too far in advance. → Store in a sealed opaque jar in a cool, dry place; crush whole seeds just before mixing if possible.
Result tastes harsh or one-dimensional.
All ingredients measured by volume rather than weight, so the 1:1:1:1:1:1:1 ratio was broken. → Rebuild using a scale (50 g each) rather than spoons.
