Bavarois · A light, set cream dessert of classical French origin: crème anglaise enriched with gelatin and bound with whipped cream, unmolded and served cold. The result occupies the space between a stirred custard and a Chantilly — trembling, smooth, aerated. It is a Foundation, not a finished dish; it receives finishes, glazes, coulis, fresh fruit, or caramel.

The formula

4:5 cream : custard (by weight); 0.8–1% gelatin (sheets) to total weight

Reference batch: 500 g whole milk + 125 g sugar + 6 egg yolks → ~625 g crème anglaise. Dissolve 8–10 g gelatin sheets (200-bloom) in cold water, bloom 10 min, squeeze dry, then fold into warm (40–50 °C) custard. Cool to 18–20 °C. Separately whip 500 g cream (min. 35% fat) to soft peaks. Fold cream into custard in two additions. Strain. Pour into dampened molds. Refrigerate ≥4 h. Yield ~1.1 kg. Scale uniformly.

Identity

  • A true bavarois is set solely by gelatin — never by starch, agar, or only egg protein
  • The cream is always incorporated cold and already whipped — never hot, never liquid
  • The base custard must be cooked to 82–84 °C maximum; above 85 °C yolks scramble and the cream weeps
  • The bavarois must be served cold (4–8 °C) and unmolded cleanly — wobble without cracking is correct texture
  • No flour, no baking powder, no commercial stabilizers in the classical formula

Method

  1. 1Infuse the milk: bring milk, sugar, and vanilla to a full simmer, stirring to dissolve sugar. Remove from heat, cover, and steep 10 minutes.Full dissolution of sugar is essential to prevent grit. Steeping extracts vanilla without over-reduction.
  2. 2Temper the yolks: whisk yolks separately. Slowly pour the hot milk in a thin stream into yolks while whisking constantly. Return combined mixture to the clean pan.Tempering prevents scrambling. Rushing this step causes immediate yolk coagulation and ruins the custard.
  3. 3Cook the custard to 82–84 °C, stirring continuously with a wooden spoon or silicone spatula in a figure-8 pattern, scraping the pan bottom and sides.At 82–84 °C the custard reaches proper nappe consistency and yolk proteins coagulate enough to thicken without curdling.
  4. 4Strain through a fine-mesh sieve into a clean bowl. Add bloomed, squeezed gelatin. Whisk to dissolve completely. Add any flavoring (purée, chocolate, coffee). Cool to 40–50 °C.Straining removes cooked egg particles. Gelatin dissolves best above 40 °C but below 60 °C; too hot degrades its gelling power.
  5. 5Whip cream to soft, billowing peaks (5–7 minutes with a balloon whisk or stand mixer at medium speed). The cream should hold its shape but remain smooth, not grainy or buttery.Over-whipped cream breaks into butter. Soft peaks fold cleanly; stiff peaks shear the gelatin network and produce a coarse, heavy result.
  6. 6Fold the whipped cream into the warm (40–50 °C) custard in two additions using a large rubber spatula. First addition: loosen the custard; second: fold gently until just uniform with no white streaks.Folding in two stages prevents overwhelming the air structure. Over-folding collapses incorporated air and risks breaking the gelatin matrix.
  7. 7Pour into dampened molds (water + drop of neutral oil wiped on a cloth, then lightly wiped — leaving slight moisture). Refrigerate uncovered 30 min to set surface, then cover. The foundational technique: heating a yolk-and-milk emulsion to controlled temperature without scrambling — the same principle underlying crème pâtissière, crème diplomate, and hollandaise.

Gelatin blooming and dissolution

Hydrating gelatin in cold water before adding to warm liquid ensures full dissolution and maximum gelling strength. Undissolved gelatin granules cause gritty texture.

Stiff-peak cream incorporation

Folded, not whisked, cream preserves maximum incorporated air. This is the same principle used in buttercream mousses, charlotte creams, and frozen parfait bases.

Tempering

Controlled heat introduction to a delicate protein system to avoid irreversible coagulation. Universal principle applied to emulsified sauces, sabayon, and pastry cream.

Variations & derivatives

Bavarois au chocolatFrance

Add 200 g chopped Valrhona (70%) to the warm custard with the gelatin. The fat in chocolate requires slightly more gelatin (add 1–2 g sheets) to maintain set.

Bavarois au caféFrance

Steep 15 g finely ground coffee in the milk before straining. Or add 30 ml strong espresso to the finished warm custard.

Bavarois aux fruits (fraise, framboise, mangue)France

Add 150–200 g fruit purée to the warm custard. Reduce sugar by the sweetness already present in the purée. Requires increasing gelatin to compensate for purée's water content and acidity (pectin interferes with gelatin set).

Bavarois au caramel / salted caramelFrance

Prepare a dry caramel, deglaze with 100 ml warm cream, strain over the custard. Add 1 g fleur de sel. Increases richness and color.

Bavarois à la pistacheFrance

Add 80 g blanched, ground pistachio paste. Typically combined with a drop of bitter almond extract and a pinch of matcha for color.

Troubleshooting

Bavarois weeps (liquid pools on the plate when unmolded)

Over-cooked custard (yolks scrambled or gelatin degraded by excessive heat), insufficient gelatin, or cream incorporated at too-high temperature causing gelatin to weaken.Recook is not possible. For future batches: use a thermometer, never exceed 85 °C, ensure gelatin is fully dissolved but not boiled, fold cream into custard at 40–50 °C maximum.

Tightly set, rubbery texture

Too much gelatin, custard cooked too long or too hot, or bavarois held at refrigerator temperature too long (gelatin contracts and expels water over days).Reduce gelatin by 1–2 g per batch. Ensure custard reaches only 82–84 °C. Serve within 24–48 hours for optimal texture.

Curdled or grainy surface when unmolded

Custard separated during cooking (temperature overshot), gelatin not fully dissolved (granules left in the mix), or flavoring added at too-high temperature causing fat separation.Always strain the custard. Ensure gelatin is bloomed and dissolved completely in warm liquid. Add acidic flavorings (citrus, certain fruit purées) after cooling to 40 °C.

Dense, heavy bavarois — no lightness

Cream over-whipped to butter, or cream folded too late after custard cooled and began to thicken, or insufficient incorporation of air during folding.Whip cream only to soft peaks. Fold cream into custard while custard is still fluid (above 25 °C). Use a wide bowl and gentle folding motion; do not deflate the cream.

Storage

Keeps 2–3 days refrigerated (4 °C), firmest and best within 24 hoursCover surface directly with plastic wrap (pressed to the surface) to prevent skin. Wrap mold tightly with film. Do not freeze the gelatin-set version (cream will destabilize); freeze only if made without cream (custard base only). Reheat: Do not reheat. Bavarois is served cold. If removed from refrigerator, consume within 1 hour; gelatin softens above 25 °C.
