beurre montée · A temporary emulsion of melted butter and cold liquid (typically water), achieved by adding a small volume of cold liquid to melted butter while whisking vigorously. Unlike hollandaise or béarnaise, it requires no eggs and relies entirely on rapid mechanical incorporation and temperature contrast to suspend fat droplets in water. It is unstable by design — a working sauce, not a finished one — but the fastest route from butter to sauce.

The formula
4:1 butter : liquid
Scale freely: 250 g butter : 60 ml liquid yields ~300 g sauce (4–6 portions); 500 g butter : 120 ml liquid yields ~600 g; 1 kg butter : 240 ml liquid for service. Works with water, white wine reduction, court bouillon, poultry glaze, fish fumet — whatever liquid matches the destination dish. Liquid must be cold (refrigerated); butter must be hot (55–65°C) but not smoking.

Method

Techniques that matter
Mechanical emulsification
No emulsifier (lecithin, egg protein) is present; stability relies entirely on rapid whisking creating sufficient shear to break butter into droplets small enough (<1 μm) to remain suspended against Stokes' law separation.
Temperature contrast method
Hot fat meets cold liquid; the thermal disequilibrium drives rapid viscosity increase and droplet suspension. A temperature differential of 40–50°C at mixing produces the best initial emulsion.
Inverted emulsion structure
Oil-continuous emulsions are typical for butter; here, water droplets are suspended in fat, creating a pourable sauce that behaves like a fat but seasons like an aqueous system. This is a low-interfacial-tension emulsion prone to rapid coalescence if undisturbed.

Troubleshooting
Sauce breaks immediately — fat separates into pools on top
Liquid was not cold enough, butter was too hot (>75°C), or whisking was insufficient. Temperature differential was insufficient to create and sustain emulsion. → Start over. Melt fresh butter to exactly 55–60°C, use cold liquid (refrigerated), pour all at once, and whisk at maximum speed for 30+ seconds without pause.
Sauce holds initially but breaks within 2–3 minutes on the plate
Gravitational separation (Stokes' settling) as emulsion is static; coalescence begins when droplets aggregate. Temperature likely below 50°C, slowing viscosity and allowing droplets to merge. → Hold sauce at 50–55°C with gentle occasional stirring; do not plate until last moment; if breaking begins, reheat slightly and re-whisk briefly.
Sauce is greasy, heavy, coats the palate unpleasantly
Butter quality too low (excess milk solids, insufficient water content), or ratio too fat-heavy (>5:1 butter to liquid). The emulsion structure is too coarse. → Use European-style 82%+ fat butter; ensure liquid ratio is no less than 1:4 (liquid:butter). A properly made beurre montée should feel lighter than melted butter.
