Brown Stock
Fond brun · A deeply flavored, amber-to-brown liquid made by simmering roasted beef and/or veal bones with aromatics in water. The roasting caramelizes proteins and collagens on the bone surfaces, yielding a stock with a distinctly rich, savory depth that white stock lacks. It is the liquid foundation of classical French braised dishes, brown mother sauces, and reductions.

The formula
2 kg roasted bones : 4 L cold water
Mirepoix ≈ 12–15 % of bone mass (≈ 250–300 g for 2 kg bones). Bouquet garni added in the last 45–60 min only; mirepoix roasted with bones or added at simmer start.

Method
- 1Roast bones at 200–230 °C (400–450 °F) for 45–60 min, turning once, until deeply mahogany-brown with no pink flesh remaining.The Maillard reaction caramelizes proteins and nucleotides on bone surfaces, creating flavor precursors (pyrazines, furans) that give brown stock its characteristic roasted depth. Insufficient color yields flat, anemic stock.
- 2Sear mirepoix in a hot, dry Dutch oven or roasting pan with the bones for the final 15–20 min of roasting.Direct contact caramelizes the mirepoix in the same fat and fond as the bones, co-extracting sugar and protein reactions. The fond (browned bits) is deglazed with cold water — never discarded.
- 3Transfer bones and mirepoix to a large stockpot. Deglaze the roasting vessel with cold water (or pour cold water directly over hot bones).Cold water on hot bones causes controlled surface protein extraction rather than precoagulation, producing a cleaner, more complete extraction. Hot water would cloud the stock instantly.
- 4Bring to a full boil over high heat, then immediately reduce to a gentle simmer (85–95 °C). Skim foam aggressively for the first 20–30 min.Boiling drives fat into emulsion and clouds the stock. A rapid boil shears proteins into fine particles that won't settle. Gentle simmering extracts collagen and gelatin without turbulence.
- 5Add bouquet garni in the last 45–60 min of the total 4–6 h simmer.Delicate volatile aromatics (linalool in thyme, bay leaf compounds) would evaporate or degrade during the full cook. Late addition preserves maximum fragrance.
- 6Strain through a fine-mesh conical strainer (chinois) lined with damp cheesecloth. Season and reduce to taste if too weak. Cool uncovered to room temp, then refrigerate.Straining removes bone fragments and particulate matter that would cloud the stock on standing. Cooling uncovered prevents condensation dilution. Reduction concentrates flavor — even a 10 % reduction dramatically deepens the stock.
Techniques that matter
Maillard Reaction
The roasting of bones at 180–230 °C creates hundreds of browning compounds (Strecker aldehydes, alkylpyrazines, heterocyclic amines) that are water-soluble and extract into the stock, defining its savory, roasted character.
Collagen Hydrolysis / Gelatin Extraction
Knuckle and feet bones are rich in Type I and Type III collagen. Extended gentle simmering (4–6 h at 85–95 °C) hydrolyzes collagen into gelatin, giving the finished stock its unctuous, coating mouthfeel — the hallmark of a properly made stock.
Foam & Impurity Skimming
Myoglobin, blood proteins, and fine bone dust rise as grey foam in the first 20–30 min. Persistent skimming prevents cloudiness and removes metmyoglobin (metallic, bitter flavor). The foam is distinct from the translucent fat cap that rises later and should be removed separately.
Fat Rendering and Decanting
Marrow bones release yellow-white fat during roasting and simmering. In a properly made stock, fat rises and solidifies on cooling. Decanting the solidified fat cap prevents rancidity and greasy flavor. Fat-free brown stock is essential for clear sauces.
Variations & derivatives
Veal Brown Stock (Fond de veau brun)France
Substitute veal bones for beef. Lighter, more delicate flavor; preferred for white-meat braises and volaille sauces. Classic in haute cuisine.
Pork Brown StockGermany / Central Europe
Pork bones yield a sweeter, milder brown stock. Common in German braising tradition (Sauerbraten, Eisbein). Not classical haute cuisine but regionally authoritative.
Game Brown Stock (Fond de gibier)France
Venison, wild boar, or hare bones roasted and simmered. Intensely flavored; used for game sauces (sauce grand veneur). Often finished with juniper berry or game jus.
Chicken Brown Stock (Fond de volaille brun)France
Roasted chicken carcasses (and necks) simmered in the same manner. Milder than beef but deeper than white chicken stock. Used in classical volaille preparations requiring more depth.

Troubleshooting
Stock tastes flat, metallic, or one-dimensional
Bones were insufficiently roasted (pale, not mahogany); insufficient simmer time (< 3 h) for collagen extraction; or stock was boiled vigorously, clouding flavor compounds. → Reduce what you have by 25–30 % over medium heat and taste again. Future batches: roast bones at 220 °C until deeply colored; simmer 4–6 h; maintain 85–95 °C, never a boil.
Stock is cloudy, murky, or opaque
Brought to a vigorous boil during initial simmer; or insufficient skimming of foam and impurities in the first 30 min. → For immediate use: pass through a damp cheesecloth-lined fine strainer multiple times. For future batches: never boil — maintain a whisper-fine simmer throughout and skim diligently.
Stock has no body or gelatin — thin and watery
Insufficient collagen source (no knuckle, feet, or neck bones); simmer too hot for too short a time; or bones from young animals with less dense connective tissue. → Add 200–300 g pork or veal feet bones per liter and simmer 3–4 additional hours. Check body by placing a spoonful in the refrigerator — it should gel within 4 h.
Stock tastes greasy or fatty
Fat was not properly rendered and decanted before storage; or stock was reheated with the fat cap on, causing emulsification. → Always remove solidified fat cap before storage. If stock is greasy, pass through cheesecloth or a fine strainer lined with paper towel while hot.
