crème anglaise · A classical French dessert sauce — a pouring custard made by suspending egg yolks in scalded milk, thickened by controlled coagulation of proteins without added starch. The formula
1 L milk : 100–125 g sugar : 6–7 yolks
For a richer sauce, substitute up to 200 ml of the milk with heavy cream (reduce milk to 800 ml). Classic minimum is 6 yolks per liter; more yolks produce a thicker, more luxurious result. Yields approximately 1.0–1.1 kg finished sauce per liter of milk. Example: 500 ml milk + 60 g sugar + 3 yolks yields ~600 g sauce.

Method

Troubleshooting
Grainy, curdled texture with visible white protein clumps

Sauce broke (separation, oily appearance, or visible liquid pooling)
Heat shock or excessive stirring after cooking can destabilize the yolk‑milk emulsion.
