Durum Extruded Pasta

Pasta secca · A family of dried pasta shapes produced by forcing a stiff, hydrated durum wheat semolina dough through dies under pressure. The hard gluten matrix formed during extrusion and subsequent slow drying creates pasta with high tensile strength, low starch damage, and resistance to overcooking — the structural and sensory ideal against which all fresh pasta is measured.

The formula

100:33–40:1–2 (semolina:water:salt)

Semolina-to-water ratio is deliberately low (33–38 % hydration), yielding a stiff, granular dough unlike egg pasta. For 1 kg semolina: 330–380 g cold water, 10–15 g fine salt. Salt is optional and added dissolved in water to avoid inhibiting gluten development. No fat, no egg. Semolina particle size should pass a 250–300 µm sieve for smooth extrusion.

Method

  1. 1Combine semolina and salt (dissolved in water). Mix in a planetary mixer with paddle at low speed 3–5 minutes until no dry flour remains.Even hydration is critical; dry pockets create lumps that block dies and produce inconsistent shapes.
  2. 2Switch to dough hook. Knead 8–12 minutes until dough is smooth, cohesive, and holds together firmly when squeezed — not sticky, not crumbly.Full gluten development creates the elastic, cohesive matrix needed to extrude without tearing and to hold shape during drying.
  3. 3Rest the dough wrapped at room temperature 30–60 minutes.Relaxation reduces elasticity, making the dough feed into the extruder screw more uniformly and preventing die back‑pressure that deforms shapes.

Techniques that matter

Low‑hydration mixing

The 33–38 % water ratio produces a stiff, granular dough fundamentally different from egg pasta. Water is restricted to hydrate proteins without dissolving them; semolina granules remain partially visible.

Pressure extrusion

Unlike sheeted pasta rolled through gauges, extrusion compresses and orients gluten strands in the direction of flow, giving dried pasta its characteristic resilience and tensile strength.

Controlled slow drying

Below the gelatinization temperature of durum starch (~55–60 °C) and well below protein denaturation. Maintains the glassy, vitreous structure of durum endosperm that resists overcooking.

Bronze die vs. Teflon die

Bronze dies create microscopic roughness on the pasta surface (holds sauce mechanically). Teflon dies produce smooth, shiny pasta. Both are correct; they produce different textures.

Variations & derivatives

Pasta di semola rimacinataSouthern Italy (Puglia, Basilicata)

Made from doubly‑milled fine durum semolina (rimacinata). Even smoother extrusion, silkier surface. Traditional for orecchiette and Pugliese long goods.

Pasta di semola integraleItaly, modern artisanal

Substitute 20–30 % whole durum flour for refined semolina. Higher fiber, nuttier flavor, slightly lower tensile strength but still within the durum extruded family.

Pasta all'uovo secca (dried egg pasta)Emilia‑Romagna, industrial Italian

Add 2–3 whole eggs per 100 g semolina. Combines durum structure with egg protein. Still extruded, still dried, but richer and more tender than water‑based durum pasta.

Pasta di GragnanoGragnano, Campania

Dried pasta of the Amalfi coast region. Historically dried by sea breezes in the town's narrow streets. Protected geographical indication (IGP). Same durum extrusion principles, distinct microclimate drying tradition.

Troubleshooting

Pasta cracks or shatters during drying

Dried too quickly or at too high temperature (>55 °C). The surface dried and hardened while the interior remained moist, creating internal stress fractures.Reduce drying temperature to 40–45 °C. Extend drying time. Ensure even air circulation around all pieces. For home drying: room‑temperature drying on linen towels 24–48 h works for small batches.

Pasta turns chalky or white inside when broken

Excessive starch damage from over‑mixing, over‑worked extrusion, or drying temperature that exceeded starch gelatinization. The interior starch gelatinized, then dried into an opaque, mealy structure rather than a glassy, translucent one.Keep drying temperature below 50 °C throughout. Reduce kneading time. Ensure extruder barrel is not overheating from friction.

Pasta becomes gluey or overcookable (turns mushy rapidly)

Using common wheat flour instead of durum, or using refined common wheat with added color. Also caused by excessive hydration (>42 %) or under‑drying.Use verified 100 % durum semolina. Keep hydration to 33–38 %. Dry to stable moisture content <12.5 % for safe storage.

Pasta sticks together when cooking

Pasta was not sufficiently dried before storage (moisture >12.5 %); surface starch gelled during cooking and fused neighboring pieces.Ensure thorough drying. Stir pasta immediately after adding to boiling salted water. Use abundant water (1 L per 100 g pasta) to dilute surface starch rapidly.

Storage

Keeps 12–24 months when properly dried to <12.5 % moisture and stored in airtight containersAirtight containers or vacuum‑sealed bags; cool, dark, dry pantry.
