Dushbara dough
Düşbərə xəmiri · A stiff, egg-enriched wheat-flour dough from Azerbaijan, kneaded firm and rolled to translucency, then cut into small squares to wrap dime-sized minced-lamb dumplings (dushbara) that are simmered in broth.

The formula
~2 cups flour : 1 egg + ~1/3 cup water (≈2:1 flour to liquid by volume)
Stiff, elastic, non-sticky; kneaded 5-10 min and rested 30 min before rolling to ~1 mm.

Ingredients

Method
- 1Sift flour into a bowl; whisk egg with salt and water in a separate cup until fully integrated.Dispersing salt and egg evenly in the liquid prevents uneven hydration and ensures a uniform dough.
- 2Make a well in the flour and pour in the egg-water liquid; mix with a spoon until a shaggy dough forms.Combining gradually keeps the dough from becoming sticky or lumpy.
- 3Turn out and knead by hand 5-10 minutes until the dough is firm, dense, smooth, and elastic but does not stick to the hands.Firm, well-developed gluten lets the dough be rolled paper-thin without tearing — soft dough cannot be rolled thin enough for proper dushbara.
- 4Shape into a ball, cover with an inverted bowl or cling film, and rest 30 minutes at room temperature.Resting relaxes the gluten so the dough rolls out evenly without springing back.
- 5Divide and roll on a lightly floured surface into sheets about 1 mm thick (translucent).Translucency is the hallmark — thick wrappers make heavy, doughy dumplings rather than delicate broth-cooked ones.

Techniques that matter
Firm hand-kneading
Develops just enough gluten so the dough can be stretched to ~1 mm without tearing.

Substitutions
- all-purpose wheat flour → white wheat flour / Type 00 — Type 00 gives a slightly silkier, more elastic sheet at this thinness.
- 1 whole egg → 1 egg yolk + splash extra water — Yolk-only version produces a richer, more tender sheet; loses some structure.
- egg-water liquid → water only (no egg) — Produces a leaner, more noodle-like dough; dumplings will be less tender and may tear more easily.changes result
Troubleshooting
Dough sticks to hands and work surface
Too much liquid relative to flour, or under-kneaded. → Dust surface lightly with flour and continue kneading until dough is firm and releases the hands.
Dough tears or springs back when rolling
Gluten not yet relaxed — insufficient rest or under-kneaded. → Return to a ball, rest covered another 15-30 minutes, then re-roll in small passes.
Rolled sheets dry out and crack at edges before filling
Cut squares left uncovered too long; humidity lost. → Keep rolled sheets under a damp cloth and cut/fill in small batches.
Cooked dumplings taste doughy or heavy
Sheets rolled too thick (>1-2 mm). → Roll thinner until the sheet is translucent when held to the light.
