duxelles · A classical French preparation of very finely minced mushrooms and shallots slowly cooked in butter until nearly all moisture has evaporated, yielding a thick, intensely flavored, paste-like concentrate. It is a flavor base, not a garnish; it exists to amplify savory depth inside other preparations.

The formula
10 : 1 : ½ mushrooms : shallots : butter by weight
1000 g mushrooms + 100 g shallots + 50 g butter → ~200–220 g duxelles (approx. 20% yield). Scale by raw mushroom weight; shallots scale at 10%, butter at 5%. Can omit shallots for pure mushroom concentrate (10 : ½).

Method
- 1Mince mushrooms extremely fine — 3–5 mm dice or finer. A food processor in short pulses is acceptable but produces uneven texture; hand-mincing with a sharp knife gives the most consistent paste-like result.Mushrooms must be minced smaller than their cells to break cell walls and release moisture efficiently. Fat as conduction medium
Butter surrounds mushroom particles, conducting heat evenly and preventing the direct contact with a dry pan that would cause scorching before interior moisture escapes.
Concentration of soluble flavor compounds (glutamates, nucleotides)
As water volume drops 4–5×, water-soluble flavor compounds become proportionally more concentrated. Mushrooms' natural umami (guanylate, glutamate) intensifies significantly.
Controlled sweating (sauté base)
Shallots are sweated (cooked in fat without color) to soften pectin and release sugars, creating a flavor foundation that the mushroom concentrate builds upon.

Troubleshooting
Mushrooms are watery and gray after cooking — no paste forms
Heat too high or cooking time too short; moisture hasn't fully evaporated. Also: mushrooms were not minced finely enough, or pan was too small (mushrooms piled too deep). → Increase pan surface area (use a wider pan); reduce heat to low; extend cooking time. Mushrooms must be in a single loose layer, not crowded. The pan is ready for the next step when the base sounds almost dry between stirrings.
Shallots or mushrooms scorch at the bottom
Pan heat too high during the sweating or late evaporation phase. Butter burned. No stirring during critical moisture-loss period. → Remove pan from heat immediately. Scrape burned bits aside; use only the unburned duxelles. For future batches: always use medium-low to low heat, a heavy-bottomed pan, and stir regularly — especially in the final drying phase when there is little liquid to protect the base.
Duxelles tastes flat, weak, or one-dimensional
Under-concentrated (moisture not fully driven off), or mushrooms were of poor quality/lacking freshness. Salt underadded. → Return duxelles to low heat and continue cooking until a wooden spoon drawn through leaves a clear trail in the paste. Season properly — salt at the near-dry stage unlocks flavor perception significantly.
Final texture is mealy or grainy rather than cohesive paste
Mushrooms processed in a food processor to too coarse a grind, or not cooked long enough for starches to gelatinize and bind the mixture. → If too coarse: return to pan and continue cooking — residual moisture will soften cell walls further. For future: process to a fine mince, near-paste consistency. If using processor, pulse in short bursts, scraping bowl between pulses.
