coulis de fruits · A strained, pourable fruit sauce made from cooked, sweetened fruit purée. Distinguished from compote by its smooth, seedless texture and lighter, more fluid body; distinguished from fruit glaze by its lower viscosity and absence of added gelatin or pectin thickeners. The coulis is the foundational bridge between raw fruit flavor and professional dessert finish.

The formula

4 : 1 (fresh fruit weight : sugar by weight); lemon juice at 1–2% of fruit weight

The ratio applies to the starting whole fruit weight before cooking. For example: 500 g fresh raspberries + 125 g caster sugar (4 : 1) + 5–10 g lemon juice (1–2%). After cooking and straining, expect a yield of approximately 60–70% of the starting weight. Adjust sugar downward for very sweet stone fruits (peach, apricot) and upward for tart berries (raspberry, currant). Reduce lemon juice for fruits with high natural acidity (currant, passion fruit).

Techniques that matter

Tamis passing

A fine-mesh strainer (tamis/chinoise) is non-negotiable for achieving the characteristic seed-free, smooth texture. Blenders and food processors leave seed fragments; only mechanical pressure through fine mesh produces a true coulis.

Enzyme inactivation through acid and heat

Fresh fruit contains polyphenol oxidase, which causes browning. Adding lemon juice lowers pH below the enzyme's operational range (~pH 3.0–3.5), and the brief heat treatment denatures the enzyme entirely. Both must be present simultaneously for reliable inactivation and bright, natural color preservation.

Controlled reduction and water activity management

The 2–4 minute cook lowers water activity (aw) from ~0.97 (fresh fruit) to ~0.90–0.92, which extends refrigerated shelf life to 5–7 days. It concentrates flavors by volume and activates the fruit's own pectin to provide body without added thickeners.

Troubleshooting

Coulis is too thin and watery
