拉麵 · A noodle made by repeatedly stretching and folding a high-protein, high-alkali dough into progressively thinner strands, creating a distinct layered gluten structure that yields a characteristically springy, resilient bite.

The formula
1000:450:20 flour : brine : salt
Brine = water + dissolved salt (2% of flour weight) + kansui/jiàngshuǐ (1-2% of flour weight). Yields ~1300g dough → 4-6 portions (~200g raw noodles each). Dough should be firm but supple, not sticky.
Identity
- Alkaline pH (kansui or jiàngshuǐ) essential for characteristic yellow color, sheen, and resilient chew
- Requires high-protein bread flour (11-13% protein) for gluten strength to survive repeated pulling

Techniques that matter
Gluten relaxation through resting
Dough elasticity must be reduced so it can be pulled without springing back or tearing. Longer rest increases extensibility.
Progressive pulling with folding
Doubling strand count each pull (1→2→4→8...) builds the layered gluten architecture responsible for the noodle's signature bounce and chew.
Starch dusting
Starch, not flour, coats strands without hydrating them, preventing sticking while maintaining clean gluten strand formation.

Lamian (Chinese)China (Lanzhou, Xi'an)
Classic version uses kansui. Wide broth, beef, herbs. Often 7-9 pulls for thick-cut strands.
Ramen (Japanese)Japan
Adapted lamian technique with kansui. Alkaline yellow noodles, thinner cut, served in rich pork/chicken broth or tare-based soups.

Troubleshooting
Dough tears or snaps during pulling
Insufficient rest, dry dough, or gluten too tight from over-kneading → Rest longer (up to 90 minutes at room temperature, or overnight refrigerated). Lightly mist surface. Ensure salt is fully dissolved.
Noodles stick together during cooking
Insufficient starch dusting during pulling, or noodles not separated before cooking → Use generous starch coating between strands. Immediately separate portions after final pull. Cook in abundant boiling water.
Mushy, gummy texture when cooked
Over-kneaded dough, overcooking, or dough too hydrated → Knead only to smooth — not excessive. Cook 2-3 minutes fresh, taste for resistance. Reduce water slightly if dough is slack.
Dough springs back immediately when pulled
Gluten too tight, insufficient rest, or dough too cold → Extend rest time. Room temperature rest relaxes gluten faster than cold rest. Work quickly once dough reaches workable temperature.
