The formula

1000:450:20 flour : brine : salt

Brine = water + dissolved salt (2% of flour weight) + kansui/jiàngshuǐ (1-2% of flour weight). Yields ~1300g dough → 4-6 portions (~200g raw noodles each). Dough should be firm but supple, not sticky.

Gluten relaxation through resting

Progressive pulling with folding

Doubling strand count each pull (1→2→4→8...) builds the layered gluten architecture responsible for the noodle's signature bounce and chew.

Starch dusting

Troubleshooting

Dough tears or snaps during pulling
