The formula

1:2 teff flour : water by weight

500 g teff flour → 1000 g water. Add 1–2 tbsp saved starter to seed fermentation. The batter should pour like thin crêpe batter after fermentation; thin with water if needed. Ferment 2–3 days at 22–25 °C (72–77 °F) or up to 7 days refrigerated. Scale freely: 1 kg teff yields ~18–20 large injera.

Ingredients

Method

  1. 1Combine teff flour and water in a non-reactive bowl (glass, ceramic, or stainless steel). Whisk thoroughly until no lumps remain. Add 1–2 tbsp saved starter if using.Hydrates the flour and disperses the wild yeast and bacteria that drive fermentation. The starter inoculates the batch with a consistent house culture.
  2. 2Cover loosely with cheesecloth or a loose lid. Ferment at room temperature (22–25 °C) for 2–3 days. The surface will bubble, develop a thin liquid layer (woha), and smell distinctly sour.Lacto-fermenting bacteria (primarily Lactobacillus) consume sugars, producing lactic and acetic acids — the signature sourness. Wild yeasts produce CO₂, creating bubbles that will later form the spongy surface. Cooler temps slow fermentation; warmer speeds it.
  3. 3Stir the fermented batter. Discard the top liquid layer (or stir it back in — the latter increases sourness). Add salt (5 g/500 g flour) and thin with water if needed to achieve a pourable, heavy-cream consistency.Salting after fermentation avoids inhibiting the bacteria during the critical souring phase. Thinning corrects consistency lost to evaporation during fermentation; injera must spread thin on the mitad.
  4. 4Heat a mitad (clay injera griddle) or smooth flat cast-iron/carbon steel griddle over medium-high heat until a water droplet dances and evaporates instantly. Pour a ladle of batter in a spiral from the outside inward. Cover immediately with a tight-fitting lid or aluminum foil dome.The very hot surface gelatinizes starches instantly; covering traps steam, which cooks the interior and causes the batter to bubble upward, creating the spongy honeycomb structure. No flipping required.
  5. 5Cook 60–90 seconds covered. Remove lid — the injera surface should show a dense pattern of bubbles and be set. Slide a spatula under and transfer to a clean cloth-lined platter. Stack immediately.Steam-cooking is essential: without it, the interior remains raw. The bubble pattern indicates proper fermentation (active batter) and correct cooking temperature. Stacking on cloth allows steam to escape without condensation making the bread soggy.

Techniques that matter

lacto-fermentation

Wild Lactobacillus bacteria ferment teff's sugars into lactic and acetic acids, developing the sour flavor essential to injera's character. This is identical in principle to sourdough, kimchi, and yogurt — time and temperature control the culture.

steam-cooking

Injera is never flipped. The covered griddle creates a steam chamber that cooks the batter through convection. The batter's surface bubbles vigorously, then sets into the characteristic honeycomb crust. This is closer to steamed buns than to a pan-fried flatbread.

batter consistency management

Post-fermentation viscosity varies with evaporation and fermentation vigor. The batter must spread thin (~2 mm) on the mitad. Too thick = undercooked center and dense texture. Too thin = breaks when folded. This is the most tactile skill in injera-making.

heat management on the mitad

Injera requires very high, even heat. The droplet test (instantaneous evaporation) is the reliable indicator. Too cool = dense, flat injera with no bubbles. Too hot = scorched surface before the interior sets.

Variations & derivatives

pure teff injera (addis or kita)Ethiopia (highlands, especially Addis Ababa)

100% dark brown teff. The most traditional, most sour, densest texture. The teff is often stone-milled fresh before mixing.

wheat-teff blend injeraEritrea and Ethiopian diaspora communities

50% teff, 50% wheat flour (or up to 70% wheat). Lighter texture, milder flavor, easier to spread and cook. Not traditional but widely accepted regionally.

barley injeraEthiopia (highland regions)

100% barley or barley-dominant blend. Denser, nuttier, less sour. Common historically before teff became dominant. Less dramatic bubble structure.

sorghum injera (doro and checha)Ethiopia (lowland regions, especially South Omo)

White sorghum replaces teff. Produces a lighter-colored injera with a milder, less complex sourness. Sorghum's lower starch gelatinization temperature requires careful heat management.

mixed-grain injera (berbere injera)Ethiopia (economical/home cooking)

Teff extended with millet, corn, or rice flour in varying proportions. Used when teff is expensive or scarce. Each grain changes texture, fermentation rate, and flavor profile.

Troubleshooting

Batter doesn't ferment — no bubbles, no sour smell after 3 days

Water may be chlorinated (inhibits bacteria), or room temperature is too cold (<18 °C)Use filtered or spring water. Move the bowl to a warmer spot (near the stove, on top of the refrigerator, or in the oven with the light on). Or add 1 tbsp plain yogurt (live cultures) to jump-start fermentation.

Injera turns out dense and flat — no honeycomb bubbles

Batter is under-fermented (too little souring), griddle is too cool, or batter spread too thickAllow fermentation to continue until clearly sour. Test-griddle a small amount and watch for bubbling before cooking full rounds. Increase heat until water dances off the surface instantly. Pour batter thinner — it should spread almost on its own.

Injera tears when folded or rolled

Batter is too thick, or cooked too long (dried out)Add water to batter to thin to pourable consistency. Reduce cooking time by 10–15 seconds. Steam more aggressively — the interior should remain moist. If the mitad is too hot, the surface sets before steam can work through.

Injera has no sour flavor — tastes like a plain wheat pancake

Fermentation was insufficient (not long enough or too cold)This is a matter of time and temperature. Allow the next batch to ferment longer, at a warmer temperature. Some cooks deliberately leave the lid off the starter for an hour to expose it to wild yeasts before covering. Sourness deepens with each batch as the house culture strengthens.

Storage

Keeps Fermented batter: 2–3 days refrigerated. Cooked injera: 1–2 days at room temperature wrapped in a clean cloth.Batter: transfer to a sealed glass jar, press a sheet of plastic wrap directly onto the surface to exclude air, and refrigerate. Cooked injera: stack in a clean cloth, fold the cloth loosely over the stack, and store at room temperature. Do not refrigerate in plastic — condensation makes it soggy. Reheat: Cooked injera does not need reheating — it is served at room temperature or slightly warm from the mitad. If desired, wrap in foil and place in a 150 °C oven for 10 minutes. Steaming briefly on the mitad also refreshes texture.
