Italian meringue formation

Hot syrup coagulates egg white proteins on contact, partially denaturing them and forcing them to form a tight, fine‑crusted foam structure that holds its shape under the fat phase.

Emulsification (water‑in‑fat)

Butter is a water‑in‑fat emulsion: small water droplets are dispersed in butterfat, with milk proteins acting as emulsifiers. In IMBC, butter is dispersed as discrete droplets throughout the egg‑white foam (an aqueous phase). Egg‑white proteins adsorb at the oil–water interface, stabilizing the fat droplets. As butter proportion increases, the continuous phase shifts toward fat, giving the buttercream its rich texture.

Controlled crystallization

By not stirring the syrup once boiling, crystallization is minimized. Any seed crystals on the side of the pan can be washed down with a wet pastry brush.

Temperature management

Butter at 18 °C (65 °F) is firm enough to add body but soft enough to integrate. The meringue must be below 40 °C. This narrow window is the crux of the technique.

Troubleshooting

Buttercream is soupy, flat, or greasy — 'broken' emulsion

Butter was added while meringue was still warm (above 40 °C / 104 °F), or butter was too soft (above 24 °C / 75 °F). Fat droplets cannot stabilize in a hot aqueous foam.Set the bowl over an ice‑water bath and beat at medium speed. The cold gradually re‑solidifies the butter, re‑incorporating the fat droplets. Too much residual moisture in the meringue (syrup not cooked to high enough temperature, or butter added before meringue was cool enough).
