NY Pizza Dough
Pasta per pizza · A lean, yeasted wheat-flour dough of moderate hydration with high gluten development, long cold fermentation, and hand-stretched application that produces the characteristic New York pizza crust: crisp and lightly charred at the edge, tender and chewy at the cornicione, with a discernible bite in the crumb.

The formula
100 flour : 60 water : 2 salt : 1 yeast : 2 oil (baker's percentages)
All ingredients scaled by weight relative to flour at 100. Oil is optional; omit for a crisper, more brittle crust.
Identity
- Must be lean — no sugar, no eggs, no dairy in the base formula
- Must use high-gluten or bread flour (minimum 12% protein) for proper chewy crumb
- Must cold-ferment minimum 24 hours for flavor development and easy extensibility
- Must be hand-stretched, never rolled with a pin
- Hydration must fall between 55–65%; below 55% produces a tight, tough crust; above 65% becomes difficult to hand-stretch

Method
- 1Combine flour, salt, and yeast in a bowl or stand mixer. Whisk dry ingredients thoroughly to disperse salt and yeast evenly.Salt and yeast must not contact each other directly in concentrated form initially, as salt can draw moisture from and damage fresh yeast cells, inhibiting fermentation.
- 2Add water (and oil, if using) to dry ingredients. Mix on low speed until no dry flour remains, then knead on medium-low for 8–10 minutes until smooth and elastic.Kneading develops gluten into a strong, extensible network that traps fermentation gases and allows the dough to be stretched thin without tearing.
- 3Form into a smooth ball, place in an oiled container, cover tightly. Cold-ferment in refrigerator 24–72 hours at 34–40°F.Cold fermentation slows yeast activity, allowing complex flavor compounds to develop over days while building acidity that tenderizes the crumb.
- 4Remove dough 2 hours before baking. Portion into 250–300g balls for 12–14 inch pies. Let rest at room temperature, covered, until bubbly and relaxed.Room-temperature rest allows the gluten to relax and the dough to become extensible for hand-stretching; cold dough tears easily.
- 5Hand-stretch each dough ball on a lightly floured surface using a gentle press-and-pull motion from center outward, rotating as you go. Never use a rolling pin.Hand-stretching preserves gas bubbles and gluten alignment; a rolling pin compresses the crumb and deflates the dough, producing a dense, flat crust.
Techniques that matter
Baker's percentage
The universal language for scaling dough formulas; flour is always 100%, all other ingredients are weighted percentages of that, allowing infinite scaling without recalculating.
Cold fermentation (retard)
Refrigerating dough for 24–72 hours allows slow, controlled yeast activity that produces organic acids (lactic and acetic) and alcohols, developing complex flavor while the gluten network relaxes for easier shaping.
Gluten development via kneading
Mechanical working aligns glutenin and gliadin proteins into long, elastic strands that give dough its viscoelastic properties — strength to trap gas, extensibility to stretch thin.
Hand-stretching
Preserves the gas cell structure created by fermentation; promotes uneven crumb with large holes near the cornicione and tighter center, the hallmark of NY-style crust.
Pizza steel or stone baking
Ceramic or steel baking surfaces store enormous heat and transfer it rapidly to the dough base, replicating the deck-oven environment and producing the crispy bottom and char spots impossible on a standard oven rack.

Sicilian Pizza DoughNew York / Long Island
Same lean formula but higher hydration (65–70%) and shorter fermentation. Pressed into a thick sheet pan, topped with thick sauce and dollops of cheese; the crust is pillowy and spongy rather than thin and chewy.
Grandma Pizza DoughLong Island / New York
Lean dough, very high hydration (up to 75%), often with oil on the bottom of the pan. Slow-fermented and baked in a well-oiled rectangular pan, producing a crisp bottom and airy, soft interior.
Neapolitan Pizza DoughNaples, Italy
Uses 00 flour (extra-fine grind, 10–11% protein), 60–65% hydration, and very high heat (900°F+). NY dough is the Italian-American adaptation: higher-protein flour for structural integrity, longer fermentation for flavor, similar thin profile.
Trenton Tomato Pie DoughTrenton, New Jersey
A lean, cracker-like dough with lower hydration (50–55%) and sometimes a small amount of sugar or lard. Baked thick with sauce on top — the progenitor of NY-style外卖 pizza aesthetics.

Substitutions
- Bread flour → All-purpose flour — Produces a softer, less chewy crust with smaller crumb holes. Acceptable for beginners but considered inferior for authentic NY character.
- Instant dry yeast → Fresh cake yeast — Use 3× the weight of instant yeast (3g fresh per 100g flour instead of 1g instant). Fresh yeast produces a more active fermentation with a tangier result.
- Bread flour → 00 flour (pizza flour) — 00 flour's lower protein (10–11%) produces a more tender, melt-in-mouth crumb and smoother extensibility, but the crust will not hold its structure as well when folded and will brown less.changes result
- Filtered water → Tap water — Chlorine can inhibit yeast; if using tap water, let it sit uncovered overnight or use a filter. Hard water can tighten gluten; soft water can weaken it.
Troubleshooting
Dough tears during stretching
Under-fermented (too much yeast, too little time) or insufficient gluten development from under-kneading → Extend cold fermentation to 48+ hours or increase kneading time by 2–3 minutes. Allow dough to come to room temperature fully before stretching.
Crust is dense and bready, not crispy
Oven temperature too low, dough ball too thick, or dough not fermented long enough (lacks the gas cells that create lift and surface area for crisping) → Increase oven temperature to maximum (500°F+ in a home oven), preheat a pizza steel or stone for 45–60 minutes, ensure 24-hour minimum cold ferment, and stretch thinner.
Burnt bottom, raw top
Baking surface not hot enough or dough is too thick — the bottom chars before the top has time to set and brown → Use a pizza steel or stone and preheat it for at least 45 minutes at maximum oven temperature. Stretch dough thinner.
Crust tastes flat or bland
Insufficient fermentation time — cold fermentation develops flavor compounds; rushed dough tastes of raw flour and yeasty bitterness → Ferment a minimum of 48 hours, preferably 72. If fermentation is less than 24 hours, increase yeast slightly and add 1% sugar to feed the yeast faster.
