Panna Cotta Base
A bare cream set gently into a yielding, trembling mass by dissolved gelatin. Panna cotta is the simplest of the cooked creams: cream, sweetener, vanilla, and gelatin. It is a foundation — a vehicle — built to carry any flavor, sauce, or fruit that rests upon it. The name is its method: panna (cream) cotta (cooked).

The formula
500 ml cream : 250 ml milk : 100 g sugar : 7.5 g gelatin
Gelatin is the single variable; 6 g gives a barely‑set soft wobble, 9 g a firm slice. Adjust to your mold size and serving temperature. The milk lowers the total fat and keeps the set from being heavy.
Identity
- Cream of sufficient fat content (30–36 %) forms the body and richness.
- Gelatin dissolved completely — bloomed in cold water first, then fully integrated into warm liquid — creates the set without heat coagulation.
- Sweetened to balance, not to sweeten; sugar also contributes body and prevents a coarse grainy texture.
- Vanilla (or a single flavour) perfumes without competing — the base is a vehicle.
- Strained through fine mesh to eliminate any undissolved gelatin fragments or vanilla seeds.
Ingredients

Method
- 1Sprinkle gelatin powder over six times its weight in cold water (or submerge sheets); let swell 10 minutes without stirring.Blooming rehydrates the collagen matrix so it dissolves cleanly and sets evenly. Stirring or heat before blooming causes lumps that cannot be re‑dissolved.
- 2Combine cream, milk, and sugar in a saucepan. Scrape vanilla bean and add both pod and seeds. Warm over medium‑low heat, stirring, until sugar dissolves and steam wisps appear — do not boil.Sugar must dissolve fully. Gentle heat extracts vanilla's aromatics. Boiling drives off water, concentrates the mixture, and risks breaking the cream emulsion.
- 3Remove vanilla pod. Add bloomed gelatin and stir until completely dissolved — the liquid should be clear with no graininess, about 2 minutes over low heat. Do not boil.Full dissolution is the entire mechanism of set. Incomplete dissolution produces gritty texture and inconsistent setting. Boiling weakens gelatin's setting power by breaking the collagen network.
- 4Strain through a fine‑mesh sieve lined with cheesecloth or a clean cloth into a pouring vessel. Taste and adjust sugar.Straining removes vanilla pod fragments and any undissolved gelatin or milk‑protein clumps, ensuring a perfectly smooth set.
- 5Pour into lightly oiled moulds or ramekins. Let cool to room temperature, then cover and refrigerate at least 4 hours, preferably overnight.Cooling to room temperature before refrigeration prevents condensation inside the mould. Full gel formation requires 4+ hours; overnight produces the cleanest, most consistent set.
- 6To unmould: run a fingertip around the edge, invert onto a chilled plate, and give a sharp downward shake. If resistance, briefly dip the base of the mould in warm water (5–8 seconds).The thin layer of oil between cream and mould breaks the surface tension. A clean, sharp shake uses gravity and momentum; warmth softens the surface gel just enough to release.
Techniques that matter
Gelatin blooming
Rehydration before heat prevents clumping and ensures the full setting potential of the collagen is available. Skipping this step is the most common cause of grainy, uneven panna cotta.
Gentle infusion
Vanilla is added to cold or warm cream and allowed to steep, extracting lipid‑soluble aromatics without boiling. Boiling drives off sensitive volatiles and imparts a cooked, flat flavour.
Fine‑mesh straining
Removes the vanilla pod and any undissolved gelatin specks or milk‑protein clumps that would cause graininess or weak spots in the finished set.
Variations & derivatives
Panna cotta al caramelloItaly, modern
Stir 50 g sugar to dark amber before adding cream; finish with a pinch of fleur de sel. The caramel becomes part of the base itself.
Panna cotta alla vaniglia con fragolePiedmont, classical
The standard: vanilla bean, unadorned cream base, served with fresh strawberries macerated in Moscato d'Asti.
Panna cotta al mieleLiguria / Northern Italy
Replace half the sugar with acacia or chestnut honey. Serve with pear mostarda or candied citrus.
Panna cotta vegana / agar‑basedInternational, modern
Replace gelatin with agar agar (3 g per litre, simmered 3 minutes to activate). Sets firmer, melts in heat, and has a slightly more brittle texture. Not interchangeable.
Panna cotta with eggNorthern Italy, rustic
A traditional variant adds 1–2 egg yolks to the warm cream for extra richness and a faint yellow hue. The yolk also contributes emulsifying lecithin.

- Caster sugar → Honey, maple syrup, glucose syrup — Each alters set quality and flavour. Reduce liquid by equivalent weight. Glucose syrup produces a smoother, less rubbery set.changes result
Troubleshooting
Weeping: liquid pools around or over the set cream.
Too much gelatin (exceeds 12 g/L), under‑chilled, or the set was broken by sudden temperature shock. → Use 6–9 g gelatin per litre for the desired firmness. Ensure the cream base cools to room temperature before refrigeration; set for the full 4+ hours.
Grainy or gritty texture throughout.
Gelatin was not bloomed before heating, or was boiled, causing partial hydrolysis and undissolved fragments. → Always bloom gelatin in cold water for 10 minutes. Dissolve in warm (not boiling) cream, stirring until fully clear. Strain always.
Will not unmould; clings to mould sides.
Insufficient oil at the mould surface, or the set is too firm and adheres to the mould wall. → Lightly oil moulds with a flavourless oil (neutral grapeseed) using a paper towel, coating all surfaces evenly. Dip the mould base briefly in warm water for 5 seconds if the set is too firm.
Flat, cooked vanilla flavour.
Cream was boiled, or vanilla infused over high heat for too long. → Never boil the cream. Infuse vanilla over low heat just to dissolve the sugar; remove from heat, add gelatin, and strain immediately.
