crème parfaite · A classical French frozen dessert foundation: a light, airy stirred custard (crème anglaise) folded with whipped cream, producing a silky frozen mousse that requires no ice cream machine. The structure comes from whipped cream aeration and egg yolk emulsification, with sugar providing body and preventing coarse ice crystals.

The formula
6 yolks : 200g sugar : 250ml cream
Cook 150g sugar to 121°C soft-ball; dissolve remaining 50g in yolks. Fold 250ml cream whipped to soft peaks. Yields ~750ml base (~10 portions at 75ml each). Egg yolks provide emulsification and richness; cream provides aeration and silky mouthfeel; sugar at ~25–30% gives body and freeze-point depression.
Identity
- Hot syrup must reach exactly 121°C (soft-ball stage) — below this and sugar structure fails; above and yolks scramble
- Egg yolk temperature and syrup pour rate must be controlled: yolks at ~20°C, pour syrup in thin stream while whipping at medium speed
- Cream must be cold (4–7°C) and whipped only to soft peaks — overwhipped cream will weep and destabilize the emulsion
- Fold gently in three additions: warm custard into cold cream, never the reverse
- No ice cream machine required — the whip creates the texture

Method
- 1Combine yolks with 50g sugar in a bowl; whisk until pale and slightly thickened (~2 minutes). Do not whisk to ribbon — just dissolve sugar and incorporate air.Dispersed sugar in yolks prevents localized overheating when hot syrup is added; the slight aeration begins building structure.
- 2Cook remaining 150g sugar with just enough water to wet (~45ml) in a clean saucepan to 121°C/250°F (soft-ball stage) — use a candy thermometer. Time from boil: approximately 5–7 minutes.121°C is the critical temperature where sugar reaches soft-ball stage — below, insufficient structure; above, risk of scorching or hard-crack phase.
- 3With mixer running on medium, pour hot syrup in a thin, steady stream down the inside of the bowl onto the yolks. Continue whipping for 5–8 minutes until bowl is cool to touch and mixture is thick, pale, and roughly doubled in volume.Rapid whisking dissipates heat and prevents yolk coagulation while incorporating air. The Italian meringue-like structure builds here.
- 4Whip cold cream to soft peaks (do not overwhip — it should fold smoothly, not hold rigid peaks). Fold cooled custard (below 30°C) into cream in three additions using a rubber spatula.Folding in stages prevents deflation; adding hot custard to cream would melt the fat structure; below 30°C protects protein matrix in yolks.
- 5Pour into mold, terrine, or parfait glasses; cover surface with plastic wrap; freeze until firm (minimum 4 hours, ideally overnight).Direct freezing sets the airy structure; plastic wrap prevents ice crystals forming on surface from evaporation.

Stirred-custard technique (crème anglaise base)
The custard is never baked or given dry heat — it is a loose stirred custard that serves as the liquid component for the frozen mousse.
Churning by whip (no ice cream machine)

Troubleshooting
Custard component is grainy or has cooked egg bits
Syrup was too hot when added, or added too quickly, causing yolk proteins to coagulate rather than emulsify → Next time: ensure syrup is exactly at 121°C and pour in thin stream; if grainy, strain through fine-mesh immediately — it may still set acceptably if only minor
Final texture is icy or coarse
Insufficient sugar (wrong ratio), improper freezing (slow freeze), or base was not fully frozen before service → Ensure 200g sugar per 6 yolks ratio; freeze at -18°C or below; serve from fully frozen state after 10-minute rest only
Base weeps or has liquid pooling after freezing
Overmixed when folding cream; cream was overwhipped; or base was thawed and refrozen → Fold cream gently, only to soft peaks; if weeping, scrape off liquid, re-mix gently, and refreeze — quality will be diminished but usable
