The hydration ratio of roughly 1:2 (flour:water) is non‑negotiable for a workable dough. The lamination fat is not part of the dough ratio per se but is the critical structural element — approximately 15–20 g ghee or oil per 250 g flour, applied in multiple thin coats across 4–6 folds. It must be spread evenly between each fold, not globbed on. The classic paratha uses 4 to 6 folds, yielding 16 to 32 layers. Atta (whole‑wheat chapatti flour) is traditional for most regional forms; maida (refined white flour) is common for restaurant‑style paratha and produces a crisper, more brittle flake.

Method

  1. 1Combine flour and salt. Steam‑layering (pressing on the tawa)

Pressing the semi‑cooked paratha forces steam into the fat‑sealed layer seams. The steam acts as a lifting agent, inflating individual layers. Without steam, no separation occurs and the paratha remains dense.

Dry‑heat and fat in combination

Paratha is not deep‑fried (unlike puri) nor is it cooked without fat. The ghee applied during cooking provides both the frying medium and contributes to the Maillard browning that gives the characteristic golden color and nutty aroma. Fat applied at multiple stages (during lamination AND during cooking) is non‑negotiable.

Troubleshooting

Dense, unleavened texture with no visible flakes

Insufficient pressing on the tawa. Steam was not generated or pressure was not applied to separate the fat‑coated layers.Press firmly with a flat spatula or heavy metal press immediately after the first sear. You should hear sizzling and see steam escaping. Apply ghee before each press. Repeat the flip‑press‑fry sequence at least twice.

Dough tears during rolling or folding

Dough is too dry and cracking, or was not rested long enough and springs back aggressively. Over‑resting is rarely the issue — under‑resting is.Ensure the dough rests a full 20–30 minutes. If it tears during lamination despite resting, knead in water a teaspoon at a time until it holds a smooth, pliable ball. Conversely, if it is too wet and sticks catastrophically, dust lightly with dry flour.

Paratha sticks to the tawa and tears on flipping

Tawa not hot enough. Fat not applied at the correct cooking stage. Storage
