pâte à choux · A unique dough of cookielike construction: a panade made by first cooking a paste with butter and water, then beaten eggs incorporated to create a moist, piping-hot dough that expands explosively in a hot oven as internal moisture turns to steam and egg proteins set. The formula

Classically 250 g water = 250 g butter = 125 g flour = 3–4 large eggs (≈150–200 g). The 0.6–0.8 egg ratio spans ribbon stage from slightly stiff to slightly loose. Flour is AP or pastry flour at ~10–11% protein. Salt (≈5 g) seasons the dough.
Identity

Method

Troubleshooting
Dough is stiff and won't pipe smoothly
Under-egg incorporation. The dough did not reach ribbon stage. → With mixer running, whisk one additional small egg (or half egg) into the dough until ribbon stage is reached. Work quickly to avoid over-mixing.
Choux collapse flat as soon as the oven is opened
Cold air shock: the egg-protein structure has not set sufficiently, and the steam pressure inside collapses when atmospheric pressure drops abruptly. → Do not open the oven for the first 15–18 minutes of baking. Ensure oven is at full temperature (200 °C+) before loading. If collapse occurs, the dough is under-baked; return to oven immediately.
Dense, gummy interior with no cavity
Insufficient drying. Either the oven was too cool, the baking time was too short, or the dough was under-egg (too stiff to expand) to begin with. → Extend baking time at 170–180 °C with the door cracked 1–2 cm for the last 5 minutes. Hollow interior requires full moisture evaporation. If gummy, scoop out the interior, dry the shell further, and re-test.
Shells explode or split along the sides rather than rising evenly
Too much egg or too much moisture in the dough; or scoring the top too deeply, creating a structural fault line rather than a controlled vent. → Ensure ribbon stage precisely. For high-profile round shapes, score the very top (not the side) with a dampened fingertip — just a shallow cross, not a cut. For éclairs, a single lengthwise score on top is correct.
