pâte brisée
pâte brisée · A lean, butter-rich shortcrust pastry — the most fundamental of all pastry doughs — made from flour, cold butter, ice water, and a pinch of salt. Its name means 'broken' or 'shattered,' describing the texture of the layered, sandy, crumbly crust it produces when properly made. It is the workhorse pastry of the French tradition, forming the structural shell for both savory and sweet preparations. Unlike richer variants, it contains no sugar and no egg, relying entirely on the mechanical development of gluten and the suspension of cold butter shards within the dough to create its characteristic flakiness.

The formula
1000 g flour : 500 g butter : 200 g ice water : 10 g salt
The classical French ratio by weight: 100% flour to 50% butter to 20% water to 1% salt. A common baker's shorthand is 3 parts flour : 2 parts butter : 1 part liquid by weight. Water is adjusted by ±10 g depending on flour absorption and humidity — the dough should appear shaggy and just hold together.

Method
- 1Combine flour and salt, then add cold cubed butter. Using a pastry cutter, two forks, or fingertips, cut the butter into the flour until the mixture resembles coarse, uneven crumbs with butter pieces ranging from pea-sized to walnut-sized — some visible and intact.The goal is to coat every flour particle with fat, preserving discrete butter shards that will create steam layers and a shattering crumb during baking. Overworking or warming the butter destroys these shards.
- 2Add ice water one tablespoon (≈15 g) at a time, mixing just until the dough begins to clump and pull away from the bowl. It should look shaggy, rough, and uneven — not homogeneous.Minimum hydration creates the most tender crust. Excess water develops too much gluten, resulting in a tough, chewy pastry rather than a crisp, short one.
- 3Gather the dough into a flat disk, wrap tightly in plastic, and refrigerate for a minimum of 1 hour (ideally 2–4 hours or overnight).Resting allows the gluten strands formed during mixing to relax, making the dough pliable and rollable without springing back. It also firms the butter, preventing it from being crushed flat during rolling.
- 4On a lightly floured surface, roll the dough from the center outward in even, firm strokes, rotating the dough a quarter turn between each pass. Roll to a thickness of approximately 3 mm (⅛ inch), or about 2–3 mm thinner than the finished crust depth desired.Even rolling ensures uniform thickness for even baking. Rotating prevents sticking and promotes a round shape. Rolling thinner than desired compensates for shrinkage during baking.
- 5Carefully transfer the rolled dough to the tart pan or tartlet mold without stretching it. Press it gently into the edges and corners, then trim the overhang flush with the rim. Refrigerate the shaped shell for 15–30 minutes before blind baking or filling.Chilling the shaped shell sets the dough's structure and prevents shrinkage during the shock of blind baking heat. Stretching at this stage causes the pastry to shrink inward during baking.
- 6For blind baking: prick the base with a fork at 1 cm intervals, line with parchment and pie weights (dried beans or ceramic beads), and bake at 190–200°C (375–390°F) for 20–25 minutes until pale gold. Remove weights and bake a further 5–8 minutes until the base is fully dried and golden.Weights prevent the pastry from bubbling and rising. Techniques that matter
Détrempe (the paste stage)
The initial flour-butter-water mixing stage creates the détrempe — a preliminary paste that will become the finished dough. This is distinct from laminated doughs where fat is folded into the dough in layers.
Fat coating and mechanical shortening
By coating flour particles in fat before any significant hydration, the gluten network is physically disrupted, producing a shorter, more crumbly texture than in lean breads or choux.
Blind baking (cuisson à blanc)
Pre-baking the shell before adding a wet filling is essential because wet fillings lack the structure to prevent the pastry from becoming soggy from beneath. Weights hold the pastry flat and prevent air pockets from forming.
Chiffonade of butter distribution
Some classical texts describe incorporating butter in thin, small sheets (chiffonade) rather than cubes, creating a more even distribution of fat platelets that produce an exceptionally fine, even crumb. Modern practice typically uses cold cubed butter.
Variations & derivatives
Pâte brisée sucrée (sweet shortcrust)France
Adds 30–50 g of powdered (sifted) sugar per 500 g flour. The sugar tenderizes, sweetens subtly, and caramelizes slightly at the edges. Used for fruit tarts and sweet tart shells. The dough is often enriched with 1 egg yolk.
Pâte brisée à l'œufFrance
Replaces some or all of the water with whole egg or egg yolk. Egg-enriched pastry has a richer flavor, deeper color, and slightly more tender, almost cookie-like crumb. Common for custard tarts and almond-based fillings.
Pâte sabléeFrance
Sablée means 'sandy.' This variant creamed butter and sugar together first (like a cookie dough) before adding flour, producing an even more crumbly, sandy, dense texture than brisée. Sugar is essential to sablée, making it a distinct formula.
Pâte feuilletée (rough puff / flaky pastry)France
Not a direct derivative — it is a laminated dough with deliberate folded layers of butter, producing thousands of distinct layers. But the brisée shell often forms the bottom of a feuillettée tart.
Fool's Puff Pastry (demi-feuilletage)France
A hybrid: fewer folds than true puff pastry (typically 3 double-folds = 6 layers) but more than brisée, giving moderate flaky layers while remaining easier to execute. Sometimes mistaken as a brisée variant.
Shortcrust pastry (British tradition)United Kingdom
Functionally equivalent to pâte brisée — flour, butter, cold water, salt. British shortcrust often includes a small amount of baking powder (about 5 g per 225 g flour) for slight lift, which is not used in classical French brisée.

Troubleshooting
Pastry shrinks inward during blind baking
The gluten network was overstretched during rolling or shaping, or the dough was rolled and shaped while too warm and then refrigerated insufficiently. → Always let shaped shells rest refrigerated for 30–60 minutes minimum before baking. Handle dough minimally and gently when transferring to the pan. If shrinkage has already occurred, press the pastry back to the sides immediately upon removing from the oven while still hot and soft.
Bottom crust is soggy or underdone despite full baking time
Wet filling placed into an un-baked shell without blind baking. Insufficient blind baking time, or weights removed too early. High-moisture filling without a protective barrier. → Always blind bake until the base is fully dried and lightly golden. For very wet fillings (fresh fruit, tomato), consider brushing the baked shell with a thin layer of melted chocolate or beaten egg white before filling, or blind bake longer.
Tough, leathery crust
Too much water added, over-mixing after water is introduced, or over-working the dough during rolling and shaping. Using high-protein flour (bread flour) or adding too much flour during rolling. → Use minimum hydration — the dough should be shaggy, not smooth. Mix just until incorporated. Rest the dough to relax gluten rather than adding flour to make it easier to handle. Roll with consistent, firm strokes, not back-and-forth kneading motion.
Fat pools or butter leaks during baking
Butter was too warm (above 20°C) during mixing, or butter shards were too large and not adequately coated with flour before hydration. Oven temperature too low. → Keep all equipment and ingredients cold. If the kitchen is warm, work quickly, use partially frozen butter, and consider placing the mixing bowl in a larger bowl of ice water. Ensure oven is fully preheated to 190–200°C — the initial blast of heat is what sets the structure before fat melts.
