φύλλο · Phyllo is a paper-thin, unleavened dough of flour, water, fat, and a small amount of acid that is rolled to translucency and layered with melted fat to produce crisp, lacelike crusts when baked. It is the structural foundation of dozens of classical pastries across Eastern Mediterranean, Balkan, and Middle Eastern cuisines. Its essence is extreme thinness combined with controlled lamination—the dough itself provides the skeleton, the brushed fat provides the shattering flaky layers.

The formula

1000 g bread flour : 480 g water : 35 g neutral oil : 30 g white wine vinegar : 10 g fine salt

~48% hydration produces a firm, low-moisture dough suitable for extreme sheeting. Vinegar and oil improve extensibility. Lamination fat (clarified butter or blend, ~60 g per 30 × 40 cm sheet) is applied between layers, not incorporated in the dough.

Method

  1. 1Combine flour and salt in a mound, create a well, add water, vinegar, and oil, and mix to a rough dough.Incorporating liquids into a flour well controls hydration and ensures even distribution before gluten development begins.
  2. 2Knead the dough for 8–10 minutes until smooth, supple, and no longer sticky.Full gluten development creates an elastic, strong network capable of being rolled to translucency without tearing.
  3. 3Divide into 10–12 equal portions (~120–130 g each), form smooth balls, and rest on a lightly floured surface covered with a damp cloth for 30–60 minutes at room temperature.Resting allows gluten to relax, making each portion far easier to roll to extreme thinness. Covered cloth prevents surface drying and crust formation.
  4. 4On a lightly floured surface, roll one portion to a thin disc (~15 cm diameter), then continue rolling toward the edges—pushing with the heel of the hand and pulling outward with the fingers—to achieve a nearly translucent sheet large enough to drape over a 30 × 40 cm baking tray.Pushing with the heel elongates gluten strands in one direction; pulling with fingers thins the center. Techniques that matter

Gluten relaxation (resting)

Allowing the dough to rest between rolling sessions reduces elasticity, making the dough progressively easier to roll thin. Without rest, the dough springs back and thins unevenly.

Lamination (fat layering)

Fat applied between dough sheets coats proteins and starches, preventing them from bonding. When heated, the fat separates the layers and the moisture in the dough creates steam, separating individual sheets into crisp, shattering flakes.

Extreme sheeting (rolling to translucency)

Phyllo must be rolled thinner than any other dough—each sheet should be 1–2 mm or less. This creates maximum surface area for browning (Maillard reaction) and a characteristic laciness. The dough's low hydration (48%) and high protein flour make this achievable.

Steam management during baking

Initial blast of high heat (190–200 °C) sets the lamination before the filling releases too much steam. Ventilation or scoring prevents the top from trapping steam and blistering rather than crisping.

Variations & derivatives

Yufka (thicker phyllo)Turkey, Central Asia

Rolled slightly thicker (2–3 mm), used as a wrap for lahmacun-style fillings and for layered flatbreads. Less lamination, more pliability.

Strudel dough (Strudelteig)Austria, Germany

A similar paper-thin dough but with higher hydration (~55%) and a longer rolling technique involving back-of-the-hand stretching. The concept and technique are closely parallel.

Troubleshooting

Phyllo tears easily during rolling or layering

Dough is too dry (low hydration) or flour has too high protein; dough not rested sufficiently; surface or hands too dry.Brush tears with a little melted butter and patch—minor tears are acceptable. Ensure dough rested 30+ minutes. Add 1–2 teaspoons water to dough if consistently too dry. Keep dough balls under a damp cloth at all times.

Phyllo becomes rubbery or chewy rather than crisp after baking

Too many sheets (overly thick); oven temperature too low; insufficient fat between layers; filling too wet.Reduce number of sheets to 6–10 total for a single-crust layer. Bake at 190–200 °C minimum. Apply fat liberally between every sheet. Pre-cook very wet fillings (spinach, tomatoes) before assembling.

Layers stick together and do not separate into flakes

Storage

Keeps Frozen phyllo: 3–6 months unopened, 1–2 months once thawed. Baked phyllo pastries: 1–2 days at room temperature in an airtight container (reheat to restore crispness).Fresh unfilled phyllo: wrap tightly in plastic wrap, then in a zip-lock bag with all air expelled, and freeze flat. Thaw overnight in refrigerator—never at room temperature, which causes drying and cracking. Already-assembled uncooked pastries can be frozen unbaked and baked directly from frozen, adding 10–15 minutes to baking time. Reheat: Baked phyllo pastries: 180 °C (350 °F) for 10–15 minutes on a rack to restore crispness. Avoid microwave, which steams and softens rather than crisps.
