छोटी रोटी · An unleavened flatbread from the Indian subcontinent made from simple hydrated whole-wheat dough, cooked rapidly on a hot surface and finished over direct flame to produce an internal steam layer that separates the bread into soft, layered interior and lightly charred exterior.

The formula
100 g whole-wheat atta : 50–55 ml water : 1 g salt (optional) : 5 g ghee for finishing
The 2:1 flour-to-water ratio by weight is inviolable. Too much water yields a dense, sticky dough that refuses to puff; too little produces a stiff, cracking dough. Salt strengthens gluten slightly but is omitted in many rural households. Ghee is brushed post-cooking, not incorporated into the dough.
Identity
- Must be made from whole-wheat atta, not refined maida — the bran and germ provide the structure that traps steam and enables the characteristic puff
- Must puff — a roti that does not puff indicates improper heat, hydration, or dough development
- Must cook on an iron tawa — its high thermal mass and conductivity are non-negotiable for proper Maillard browning without burning
- Must rest the dough — minimum 15 minutes under a damp cloth, allowing gluten relaxation for a supple, tear-free rolling surface
- Must be eaten within minutes of cooking — unlike leavened breads, roti degrades rapidly as it cools, becoming stiff and leathery
Ingredients

Method
- 1Combine atta and salt in a wide bowl. Add water gradually, mixing with fingers from the perimeter inward until a shaggy mass forms.Gradual water incorporation prevents uneven hydration pockets. The finger-mixing action begins gluten development through mechanical work and allows feel-based hydration adjustment.
- 2Knead the dough vigorously for 5–8 minutes until it is smooth, elastic, and yields a clean ball that does not stick to the bowl. Cover with a damp cloth and rest for 15–30 minutes.Kneading develops the gluten network sufficient to contain expanding steam. Resting allows gluten relaxation (reduction of spring tension), making the dough supple and rollable without spring-back. Skipping the rest produces a dough that shrinks during rolling, creating uneven thickness.
- 3Pinch off a 60 g portion (tennis-ball size). Roll on a lightly floured surface into a thin disc, 15–18 cm diameter, 2–3 mm thick, maintaining even thickness throughout.Uniform thickness ensures even heat penetration. Thicker dough prevents complete cooking before the surface burns; thinner dough loses moisture too rapidly and fails to puff. The disc should be translucent at the edges when held to light.
- 4Place the disc on a preheated iron tawa over medium-high heat (220–260 °C surface temperature). Cook 30–45 seconds until small brown spots appear on the underside and the surface shows matte translucency. Flip and cook the other side 20–30 seconds.This dry-heat stage sets the surface structure through Maillard and caramelization reactions. The brown spots indicate adequate browning without scorching. Heat must be high enough to generate steam quickly inside the dough but not so high as to burn the surface before the interior cooks.
- 5Transfer the partially cooked roti directly onto an open flame (gas flame) using tongs, or place on a very hot section of the tawa and press edges with a cloth-wrapped hand to encourage puffing. Cook 10–20 seconds per side until fully inflated like a balloon.Direct flame contact causes rapid internal moisture to flash into steam, which expands and delaminates the gluten structure, separating the bread into layers. The puff is both texture-defining and proof the interior is fully cooked. This step (phulka technique) is what distinguishes authentic roti from many restaurant imitations that omit it.
- 6Remove from flame, brush generously with ghee, and wrap immediately in a clean kitchen towel or place in a covered container.Ghee adds fat-soluble flavor compounds and slows retrogradation (staling) of the starch. Wrapping traps steam, which softens the exterior and keeps the roti pliable. Roti must be served within 10–15 minutes of cooking.
Techniques that matter
Dry-heat cooking on cast iron
The high thermal mass of an iron tawa maintains consistent surface temperature, preventing hot spots that would burn the thin bread before the interior sets. The iron also provides trace iron nutrition, particularly significant in populations where anemia is prevalent.
Steam-layer delamination (puffing)
When dough reaches approximately 100 °C internally, moisture flash-vaporizes into steam. Since steam occupies ~1,600 times the volume of water, it inflates the bread from within. The gluten network must be sufficiently developed and coherent to contain this pressure without rupturing. The delamination between layers is mechanical — steam creates the separation plane, not a chemical leavener.
Dough resting (gluten relaxation)
Freshly kneaded dough exhibits elastic recovery (spring-back) when rolled due to stressed gluten strands. Resting allows hydrogen bonds to reorganize, releasing tension without losing the developed gluten structure. A rested dough rolls smoothly and retains its shape.
Feel-based hydration adjustment
Atta absorption capacity varies with grind coarseness, grain moisture content, and ambient humidity. The ratio provides a starting point; the final hydration is judged by dough feel — it should be soft, slightly tacky, and clean to the touch without leaving residue on fingers.
Variations & derivatives
phulkaRajasthan, Punjab, broadly pan-Indian
Identical to roti but the puffing over open flame is mandatory rather than optional. The term 'phulka' derives from 'phoolna' (to inflate). Most home-cooked roti follows this method. The extended flame contact produces a slightly more toasted exterior.
bhusaulBihar, Eastern India
A rougher, thicker roti made from coarse atta with higher bran content. Cooked similarly but the rougher crumb does not delaminate as dramatically. Historically associated with rural austerity — less refined, more fiber.
rumali rotiLucknow, Awadhi cuisine
Exceptionally thin (1 mm or less), tissue-paper thin. Made from maida (refined flour) not atta. Cooked on an inverted convex tawa (saj). Extremely delicate, meant to be served immediately. A specialty bread, not a foundation staple.
chapati with oilSouth India, Sri Lanka
A small amount of neutral oil (10–15 g per 100 g flour) is incorporated into the dough, producing a slightly more flexible, longer-keeping bread. Common in packed lunches and travel food.

Troubleshooting
Roti does not puff — remains flat and dense
Three possible causes: (1) Insufficient dough hydration — dry dough cannot generate enough steam; (2) Inadequate kneading — gluten network is not coherent enough to contain steam pressure; (3) Heat too low — surface sets before interior reaches cooking temperature. Cold tawa is the most common cause. → Adjust hydration, knead until smooth and elastic, ensure tawa is properly preheated (a water droplet should dance and evaporate immediately on contact). If the dough is dry, add water 5 ml at a time and re-knead. If kneading was insufficient, knead an additional 3–5 minutes before resting.
Roti sticks to the tawa and tears when flipping
Tawa surface is insufficiently hot, or tawa is not seasoned. Cold tawa creates friction with the moist dough surface, causing adhesion before the surface has set and dried. → Ensure tawa is hot before placing dough — a water test confirms readiness. If sticking persists, lightly grease the tawa with a small amount of oil wiped to a thin film (traditional tawa should not need grease, but poorly seasoned iron may). The roti should release naturally when the surface has cooked sufficiently.
Roti becomes hard and leathery within 10 minutes of cooking
This is the natural staling process of starch retrogradation accelerated by rapid cooling. It is not a cooking error but a material property. The starch molecules recrystallize as the bread cools, expelling moisture and causing hardness. Roti lacks the fat and sugar that slow staling in enriched breads. → Roti must be eaten immediately after cooking. If make-ahead is required, store wrapped in an airtight container with a damp paper towel, and reheat on a tawa with a few drops of water, covered, to steam-soften. Staling is irreversible after 2+ hours at room temperature.
Roti burns on the surface while the interior remains undercooked
Heat is too high. The open flame is too aggressive, or the tawa is too hot. The surface carbonizes before the interior reaches 100 °C and generates sufficient steam. → Reduce flame slightly. The puffing flame should be medium, not maximum. For the tawa stage, if browning is too rapid, reduce heat to medium. Proper heat is when the brown spots appear evenly within 30–45 seconds, not immediately.
