Roti Canai Dough
Roti Canai · A slack, enriched, and laminated wheat-flour dough of Indian subcontinent origin, adopted and codified by Malaysia's Mamak community as the national bread's foundation. The dough itself is a reusable, intermediate preparation: a soft, almost batter-like mass that is portioned, oiled, coiled, rested, then stretched paper-thin by hand-flipping (tebar) before griddling. It is not a finished dish; finished roti canai/paratha is the cooked derivative.

The formula
3:1 flour : total liquid (water + milk) by volume
Approximate ratio. Tony Tan: 500 g (3⅓ cups) flour to ~250 ml combined water+milk. Egg and ghee are enrichments/lamination fat and not counted in hydration.
Identity
- Laminated enriched wheat dough — a base preparation, never served uncooked
- Slack, almost pourable consistency achieved via high hydration and prolonged rest
- Ghee or clarified butter folded/laminated into dough to create flaky pull-apart layers
- Rested a minimum of 1 hour, often overnight, for full gluten relaxation
- Stretched paper-thin by the 'tebar' hand-flip technique unique to Mamak roti makers
- Descended from Indian paratha; standardised and enriched with egg and condensed milk in Malaysia

Method
- 1Combine dry ingredients (flour, salt, sugar) in a bowl or food processor; add wet (water, milk, egg, condensed milk, oil/ghee).Distributes salt and sugar evenly before hydration; condensed milk and egg disperse best when introduced with the liquids.
- 2Mix to a soft, smooth, slightly tacky dough — slack but cohesive, not stiff.High hydration (≈55–60%) is essential for the final roti to be stretchable paper-thin without tearing.
- 3Knead briefly (5–8 min by hand or 3 min in processor), then coat surface with ghee or neutral oil.Brief kneading develops just enough gluten; the oil coat prevents drying during the long rest.
- 4Rest the dough, covered, for a minimum of 1 hour at room temperature — overnight in the refrigerator is traditional.Prolonged autolysis relaxes gluten so the dough can be stretched by hand without snapping back; cold rest also deepens flavour.
- 5Portion dough into ~60–80 g balls; flatten each into a disc, brush generously with ghee, then coil into a tight spiral (Swiss-roll style). Rest coiled balls 15–30 min.The coiled layers of ghee are what become the visible flaky strata when the roti is later stretched and cooked.
- 6Stretch each coiled ball by the 'tebar' technique — slap and flip between oiled hands until paper-thin and translucent.Mechanical stretching (rather than rolling) elongates gluten strands and redistributes the coiled ghee into thin films, producing the signature lamination.
- 7Griddle on a hot flat pan with additional ghee, flipping once, pressing gently so layers puff and crisp.Direct contact heat crisps the outer ghee film; the trapped steam puffs the internal layers apart.
Techniques that matter
Tebar (hand-flipping stretch)
Produces paper-thin dough with even ghee distribution without the compression of a rolling pin; signature Mamak technique.
Coil-lamination (Swiss-roll fold)
Encases ghee between dough layers in concentric rings; uncoiling and stretching later reveals them as flaky strata.
Long cold autolysis
Fully relaxes gluten so the high-hydration dough can be stretched by hand instead of rolled, preserving air pockets between ghee films.

Same dough; often served with fish or chicken curry, or with a raw egg cracked on top during cooking (roti telur).

Stretched roti wrapped around sliced banana and condensed milk, then griddled — dessert version.

Roti canai briefly inflated on the griddle, then slashed and flooded with sweetened condensed milk.

Close cousin — also coiled and stretched; tends to be smaller and richer with more ghee, no condensed milk.

Substitutions
- Plain (all-purpose) flour → Bread flour — Higher protein yields chewier, more elastic dough; needs slightly more liquid. Acceptable for stretchier result.
- Ghee → Clarified butter — Functionally identical; flavour nearly the same.
- Ghee → Neutral vegetable oil — Produces a less aromatic, slightly less flaky roti — common vegetarian Mamak shortcut.
- Sweetened condensed milk → Sugar + 1 tbsp milk powder — Recreates the tenderness and faint sweetness; less authentic colour.
- Egg → Omit (use extra water/milk) — Closer to Indian paratha; softer crumb and slightly less rich.
- Whole milk → Water only — Authentic Indian paratha uses water only; Mamak-style enrichment is lost.
Troubleshooting
Dough tears or snaps when stretched
Insufficient resting; gluten not fully relaxed → Rest dough balls at least 1 hour at room temperature or overnight in the refrigerator; warm slightly before stretching.
Roti is dense and tough, not flaky
Too much flour incorporated during stretching, or insufficient ghee lamination → Keep hands oiled during tebar; never dust with flour. Brush more ghee between coil layers.
Layers don't separate when cooked
Coil was not tight enough, or ghee was not evenly distributed → Re-coil tightly; ensure ghee films every layer. Rest coiled balls longer before stretching.
Dough is sticky and unworkable
Hydration too high for current flour, or insufficient kneading → Lightly oil hands rather than adding flour; knead 2–3 more minutes to develop structure.
