The formula

200 g white sugar : 100 g water : 120 g heavy cream : 90 g unsalted butter : 5 g fleur de sel

1 : 0.5 : 0.6 : 0.45 : 0.025 by weight. Scale to any batch; all components scale proportionally. The water evaporates during cooking and does not remain in the finished sauce.

Troubleshooting

Caramel seized into a hard, unworkable mass when cream was added.
