The formula

2% salt by mass of shredded cabbage (≈20 g salt per 1 kg cabbage)

Measured on shredded cabbage weight BEFORE salting. Halve the ratio (1%) for a mildly salted short-ferment; increase to 2.5% only if fermenting above 20 °C for extended periods. Salt is the sole fermentation agent — it suppresses putrefactive bacteria while selecting for beneficial Lactobacillus species that generate lactic acid.

Method

  1. 1Remove damaged outer leaves and core from the cabbage. Shred to a uniform 1–2 mm julienne using a mandoline, food processor, or sharp knife.Uniform shred width ensures even salt distribution and consistent brine extraction. A thick core shred resists salt penetration and ferments unevenly.
  2. 2Weigh the shredded cabbage. Measure exactly 2% of that weight in non-iodized salt. Layer cabbage and salt in a wide vessel, massaging firmly with clean hands or a tamper as you add each handful.Massaging ruptures cell walls and accelerates osmosis — the salt draws out intracellular liquid to create the anaerobic brine. Working in layers ensures even salt distribution.
  3. 3Once brine pools at the surface and cabbage is thoroughly compressed, pack the mixture firmly into a clean glass mason jar or ceramic crock. Press down hard until liquid fully submerges the shreds. Place a weight (a small sealed bag of brine or a glass fermentation weight) on top to keep cabbage submerged.Complete submersion under brine excludes oxygen, which is essential for LAB growth and prevents growth of aerobic spoilage organisms (mold, yeast bloom). Any cabbage above the brine line will soften and discolor.
  4. 4Seal loosely if using an airlock lid; otherwise loosen the lid a quarter-turn daily to vent any gas. Ferment at 18–21 °C (room temperature) for 3–6 weeks, tasting every 5–7 days.Lactobacillus thrives at this moderate temperature range. Cooler temperatures slow fermentation and produce a cleaner, more complex sourness. Warmer temperatures accelerate fermentation but risk off-flavors and excess softening.
  5. 5When the kraut reaches the desired sourness (typically 4–6 weeks at room temperature), seal the jar and move it to cold storage.Cold (below 4 °C) arrests LAB activity, preserving the achieved flavor profile. Fermentation continues very slowly in the refrigerator but texture holds.

Techniques that matter

Lacto-fermentation

Indigenous Lactobacillus bacteria (present on raw cabbage leaves) convert available sugars into lactic acid, lowering pH and creating the characteristic sourness while simultaneously preserving the vegetable without heat or canning.

Dry-salting / dry cure

Salt is added directly to the vegetable without pre-dissolving in water. Osmosis extracts liquid from the cabbage to create its own brine, ensuring proper concentration and anaerobic conditions from the outset.

Anaerobic submersion

Excluding oxygen by keeping cabbage fully submerged is the single critical safety measure — it selects exclusively for LAB and prevents growth of molds, yeasts, and pathogenic bacteria that require oxygen.

Bavarian plain sauerkrautGermany (Bavaria)

Shredded with salt only, no caraway. Often cooked briefly in its own juice with a splash of white wine and a touch of sugar before serving with pork belly or Schweinshaxe.

Choucroute garnieFrance (Alsace)

Served as a cooked braised sauerkraut accompaniment to a full array of charcuterie (smoked pork belly, Saucisse de Strasbourg, Morteau sausage, salt-cured pork knuckle). Braised with stock, onion, and Lard gras.

Kapusta kiszonaPoland

May include grated raw carrot, onion, or juniper. Often served warm as a side to bigos (hunter's stew) and żurek. Traditionally made in large ceramic crocks in autumn.

Bay leaf & peppercorn sauerkrautPan-German

Add 1–2 bay leaves and 4–5 black peppercorns per kg for a more savory, herbal profile. Common in commercial preparations.

Red cabbage sauerkrautNorthern Europe

Use red cabbage instead of green. Fermentation produces a purplish hue (anthocyanin pH shift). Slightly higher sugar content gives a brighter, sharper sourness. Serve with game.

Troubleshooting

White film (kahm yeast) forming on the surface above the brine

Insufficient submersion — cabbage was not pressed below the brine line; oxygen exposure allowed aerobic yeast (Zygosaccharomyces rouxii) to grow on the surface.Skim off the surface film. Press the cabbage deeper into the brine. If the kahm layer is thin and the kraut beneath smells normal (not rotten), it is safe — taste to confirm. Ensure the brine level is high enough to cover all shreds completely.

Soft, mushy, or slimy texture

Fermentation temperature too high (>25 °C), salt ratio too low, or excessive physical compaction during packing. Also caused by using non-firm outer cabbage leaves or over-shredded cabbage.Use only tight inner cabbage leaves. Ensure salt ratio is accurate (2%). If mushy, use immediately as a cooked preparation — heat in butter with onions and a splash of white wine, braising until tender. The cooked application masks textural flaws that are unacceptable in raw service.

No sour flavor after 6 weeks at room temperature

Too much salt (over 2.5%) slowing LAB activity; fermentation temperature below 15 °C; or salt was measured on final packed weight rather than shredded cabbage weight, effectively overdosing the batch.Move to a warmer spot (18–21 °C). If flavor is flat but texture is good, continue fermenting — sourness develops on a logarithmic curve and may require up to 8–10 weeks at cooler temperatures.

Dark, gray, or discolored cabbage with an off smell

Excess oxygen exposure combined with insufficient salt, allowing butyric acid bacteria or putrefactive organisms to develop.Discard entirely if odor is foul (rancid, ammonia-strong) or texture is disintegrated. If only mildly off-color but still smells clean and tastes acceptable, cook thoroughly (boiling) before use to eliminate anaerobic pathogens — do not serve raw.

Storage

Keeps 3–6 months refrigerated in sealed jar, submerged in its own brineAfter fermentation, press cabbage firmly into a clean glass jar, pour the accumulated brine over to cover completely. Seal with a lid. Store upright in the refrigerator (ideally 0–4 °C). A thin layer of white sediment at the bottom is normal LAB residue and harmless. Reheat: For cooked applications, drain and sauté in butter or pork fat with onions, deglaze with white wine, and braise until tender — typically 20–30 minutes over medium-low heat.
