1 kg total batch: 680 g white granulated sugar, 340 g toasted seeds (sesame, pepitas, sunflower — any combination), 45 g unsalted butter. Troubleshooting

Sugar seized into hard clumps when seeds were added

Seeds were not completely dry or were too cold, introducing moisture that triggered crystallization; or seeds were added while sugar was below hard-crack stage.Ensure seeds are toasted, cooled, and bone-dry. Always add seeds only after sugar reaches 300°F+; if seized, return clump to pan with 30 ml water, reheat to hard-crack, and retry with properly dried seeds.

Brittle is bendy or chewy instead of shattering

Sugar was undercooked (below hard-crack stage, ~285°F), or high humidity softened the sugar glass after cooling.Use a thermometer and ensure sugar reaches exactly 300–310°F. Store finished brittle in an airtight container with a silica packet if in humid climates.

Brittle crystallized or turned grainy

Stirring during boiling, using contaminated equipment, or adding seeds too early before water fully evaporated.Never stir after sugar dissolves. Use a clean, dry saucepan. If crystallization occurs mid-cook, add 60 ml water, re-dissolve completely, and recook without stirring.

Seeds sank to the bottom of the sheet

Storage
