Semifreddo Base

Semifreddo · A frozen dessert base of sabayon (cooked egg‑yolk foam) folded into whipped cream, frozen unmoulded and served semi‑frozen — soft at the centre, set at the edges. Its defining trait is an air‑light, foam‑stabilised structure without mechanical churning. The name is a texture descriptor: half‑cold.

The formula

3 yolks : 75 g sugar : 250 ml cream

Scale by yolk unit: 1 yolk ≈ 20 g. Each yolk unit needs 25 g sugar and ~80 ml cream. 2 g gelatin sheets per 3 yolks give clean slicing; omit for a looser mousse‑like result. Yields one 900 ml loaf pan (6–8 portions).

Identity

  • Sabayon must reach 65–71 °C (ribbon stage) — just below the yolk coagulation threshold of 70 °C
  • Cream must be whipped to soft peaks only — firm peaks cause fat destabilisation and weeping during freezing

Ingredients

BinderGelatin sheets (or 1 g powdered gelatin)2 g sheets. Stabilises the foam and suppresses large ice‑crystal formation. Essential for clean slicing; omit for a looser mousse.
LiquidWater30 ml for dissolving gelatin. Optionally part Marsala, grappa or neutral spirit (15–20 % of liquid) to lower the freezing point and improve texture.
FatDouble cream (35 % fat minimum)250 ml, cold. Provides richness, lightness and the bulk of the foam structure. Must be cold for proper aeration.
FlavorVanilla pod, zest or pure extract½ pod or ½ tsp extract. Classic flavouring. Replaceable with 15 ml spirit, coffee, chocolate or fruit purée for infusions.

Method

  1. 1Bloom gelatin in cold water for 10 minutes. Drain, squeeze dry and dissolve in 30 ml warm water (40–45 °C) or the chosen spirit. Hold at room temperature.Hydrated gelatin must be fully dissolved and warm before incorporation; cold gelatin will lump irreparably into the hot sabayon.
  2. 2Whisk yolks and sugar in a deep bowl until pale, thick and combined. Set over a barely simmering water bath (bain‑marie) and whisk continuously at moderate speed.Constant agitation prevents local hot spots that would coagulate yolk proteins. The pale colour indicates adequate sugar dissolution and air incorporation.
  3. 3Cook sabayon to 65–71 °C (ribbon stage: mixture falls in a thick ribbon that holds for 2 seconds before dissolving). Remove from heat immediately. If adding spirit, pour it in now off‑heat and whisk 30 seconds.At 70 °C yolk proteins begin irreversible coagulation. The ribbon stage ensures a stable foam without cooked‑grain texture. Spirit adds flavour and lowers the freezing point.
  4. 4Stir dissolved gelatin into the hot sabayon until fully incorporated. Place bowl in an ice bath and stir gently until sabayon reaches 20–25 °C — thick, glossy and slightly cooled.Cooling the base before folding prevents the cream from partially melting. Gelatin must be integrated while warm and fully dissolved.
  5. 5Whip cream to soft peaks only (ribbon lifts and folds back). Fold ⅓ of cream into cooled sabayon vigorously to lighten. Fold remaining cream in two additions, using a wide spatula with deep, sweeping motions, turning the bowl 90° each time.Two‑stage folding preserves maximum incorporated air. Soft peaks (not firm) maintain fat structure integrity; over‑whipped cream weeps serum during freezing.
  6. 6Pour into an oiled, lined loaf pan or terrine. Cover surface with cling film pressed to the surface. Freeze a minimum of 6 h, preferably overnight (12–18 h).Oiling and lining allows clean unmoulding. Pressing film to the surface prevents a dry crust forming. Full rest allows gelatin to set fully and flavour to meld.
  7. 7To serve: dip the mould briefly in warm water (5–8 seconds), invert onto a chilled plate and slice with a hot, dry knife. Alternatively, portion into individual ring moulds.Warm‑water bath melts the outer surface just enough to release the mould without melting the interior. Hot knife gives clean, sharp cuts without dragging.

Techniques that matter

Sabayon / Zabayone cookery

The cooked egg‑yolk foam is the structural heart of the semifreddo. Temperature control is the critical variable — too cold yields a weak foam, too hot yields grainy, coagulated protein.

Gelatin stabilisation

Gelatin creates a thermoreversible protein network that traps air cells and restrains ice‑crystal growth, producing the characteristic smooth, sliceable texture versus an icy granular result.

Fat emulsification (yolks)

Yolk lecithin acts as an emulsifier between the fat phase (cream) and water phase (sugar syrup), stabilising the combined foam against collapse.

Foam incorporation (meringue / cream folding)

The mechanical incorporation of air into fat (cream) and protein (yolk) matrices distinguishes semifreddo from a simple frozen custard. The two‑stage fold preserves maximum volume.

Static freezing (no churn)

Without agitation, ice crystals form slowly and grow large, but the gelatin‑stabilised protein foam and high fat content produce a mousse‑like result rather than a granular ice‑cream texture.

Variations & derivatives

Zabaglione SemifreddoItaly (classic)

Traditional: cooked Marsala zabaglione substituted for the sugar‑yolk base. Flavour is bold, spirit‑forward. Gelatin usually omitted.

Semifreddo al Gianduja / PiedmontesePiedmont, Italy

Fold 60 g toasted hazelnut praline paste or 80 g gianduja chocolate into the finished base. The richest variant; often served with whipped mascarpone.

Neapolitan SemifreddoCampania / Anglo‑American tradition

Layered: vanilla semifreddo, chocolate semifreddo and strawberry or candied‑fruit semifreddo in one mould. A 19th‑century Neapolitan bakery invention that spread internationally.

Frozen Mousse (Mousse Glacée)France / modern fine dining

Substitute 100 ml Italian meringue (30 g sugar syrup poured into 1 white at medium peak) for ⅓ of the whipped cream. Lighter, lower fat, more technically demanding.

ParfaitUK / Commonwealth

Essentially an English‑language semifreddo. Often uses a brown‑butter sabayon (praline parfait) or coffee. Always includes gelatin. Served in thick slices.

Troubleshooting

Semifreddo is runny, weeping serum or slushy after freezing

Under‑whipped cream (insufficient air and fat incorporation) OR too much liquid from broken cream OR insufficient gelatin bloomWhip cream to a definite soft peak — it should hold a trail of the whisk for 2 seconds. Ensure gelatin is fully dissolved and added at ≤35 °C. If already frozen, remelt, correct and refreeze.

Grainy, sandy or lumpy texture throughout

Sabayon cooked above 72 °C; yolk proteins have partially coagulated into visible protein strands. Also caused by undissolved gelatin lumps.For future batches: cook over barely simmering water, never let the base water contact the bowl. Remove from heat at ribbon stage. Strain through a fine sieve before folding cream.

Hard, icy centre despite long freezing

Insufficient gelatin or alcohol; high water content with no anti‑nucleant to prevent ice‑crystal growthAdd 2 g gelatin sheets per 3 yolks. Include 15–20 % spirit by liquid volume. For already‑frozen product: let soften 5 minutes before serving.

Semifreddo collapses or deflates when unmoulded

Over‑folding or folding too late (base and cream at different temperatures causing fat to destabilise) OR insufficient resting time for gelatin to setFold when both components are at 20–25 °C. Rest a minimum of 6 h, preferably 12–18 h. If it collapses on unmoulding, it can be scooped and served as a frozen mousse.

Storage

Keeps 3–4 weeks (optimal); up to 8 weeks in airtight containerWrap the unmoulded log tightly in cling film, then a second layer of foil. Store flat in the freezer at -18 to -22 °C. Do not refreeze after thawing. Reheat: Not applicable. Serve directly from the freezer; allow 5–10 minutes at room temperature for easier slicing.
